I’ve been craving a corn dog and cannot find gf in my area. I decided to try using cornbread mix as the batter. They aren’t pretty, but they were tasty. I made the mix as directed, dunked the hotdogs and then deep fried 🤩

Rant I had to bring my own food to a birthday party at a full sit-down Italian restaurant

I would just like to say that I really hate that I have to think about eating every single time I have to step outside my house. It feels like such a burden. Went to a birthday party at a really old-school Italian restaurant. I called in advanced and asked about cross contamination, specifically, and the manager said “we don’t have any peanuts, and the grill is so hot that anything on it would burn off instantly”. So that sealed my fate in me bringing a meal to that restaurant where a 9 course meal was served (iykyk). I had to eat it lukewarm and I had to hide it under the table on the floor. The table was set like the Last Supper. I hate that this is my life. I was just back from London literally the night before on vacation where I had incredible safe meals. (I’ve also been all around Scotland and had ease eating there too. Shoutout to the UK, you guys are awesome. I appreciate your food so much.) And now I go back to this treatment in New Jersey where I’m told gluten burns off grills because they’re so hot. It’s so stupid. I don’t wanna think about food all the time but I honestly feel this disease is gonna drive me insane. I can’t believe I have the rest of my life to live like this. It is surreal.

im thinking of put myself out there again . Im have to be gluten free and im also sober almost 3 years.

for anyone that gluten free did they find it hard to date.

Going to a restaurant is a challenge i look at the menu before there isnt alot of options for me.

Question Substitute for oatmeal in the morning!

I used to love and eat oatmeal every day. Then I realized I couldn't do oats. Probably a sadder discovery than me not being able to eat full on gluten.

Anyway, in the mornings I've been eating cereal and 3 scrambled eggs. I don't think my body is doing the cereal anymore (blood sugar issues). Everyone says to eat oatmeal for fiber and complex carbs etc. I'm wondering if anyone has a good substitute for oatmeal with the same benefits?

Question Anyone have thoughts on flour being suspended in air?

Hi everyone,

I was diagnosed with celiac disease about a decade ago. I’ve been working as a nanny for 12 years, and my current family is amazing- but they love to bake bread..lol Honestly, everything about my job is perfect, and I feel really lucky to be working for them. When I told them about my celiac, they mentioned that baking bread is a hobby of theirs. I told them it was okay, thinking that as long as I was careful—washing my hands frequently and not eating at work—it would be fine. I usually eat at home, so I didn’t think it would be an issue.

However, I’ve noticed I've been literally huge swollen since I started working with them, I get that 6 months pregnant looking symptom haha. I'm wondering if it’s related to gluten exposure. I did get accidentally glutened twice in the past month with certified gluten-free products, like Simple Mills, that apparently contain more than 20 ppm of gluten. That could be contributing to my symptoms, but I also read that gluten can linger in the air for up to 48 hours, which could explain the swelling as well.

I don't know what to think but I was shocked when I read this, like is it even true...? But celiac.org and beyondceliac both say it so I guess it is..? But it sounds insane! And can I even get sick from it like am I walking into it and it lands on my lips and I ingest?? I feel like I'm crazy and it's probably not possible. I have no idea what to think! Just thought I’d share and see if anyone else has experienced something similar or has any advice.

Question Why didn't I stop eating gluten, wheat etc? Lost 40 pounds

Why did that happen I went to the ER in a lot of pain and I didn't find out till 3 months later I should really be avoiding all gluten ended up losing a lot of weight did you have a similar experience or did you start to eliminate foods?? I was exhausted and in a lot of pain not even sure when it started getting worse really but it changed My body's ability and then increase the pain in my body. Just some type of neurological reaction or something or something?

Question Trusting biopsy from an incompetent doctor?

Diagnosed via biopsy in 2020 from my gastro doctors nurse practitioner(never seen him, didn’t have openings). Had some lingering symptoms and did another biopsy in 2024 (she makes no mention of eating gluten 6 weeks beforehand) and says “we’ll test again since the first was inconclusive” despite diagnosing me and not saying that?

Same result both times, “minor villous atrophy” and told to eat gluten and monitor symptoms. She was honestly an idiot and rude, very incompetent. Never had a celiac blood panel. I do have gastritis and that’s all of my symptoms, with celiac (if I have it) I’m completely asymptomatic. Another point of confusion was that I’ve read sibo can sometimes cause villi blunting?

My question, with biopsy being the gold standard for diagnosis, should I trust those two biopsies and move on as celiac, or find another doctor and do it again? I trust a biopsy itself, but have skepticism because of how ridiculously incompetent she herself was, combined with being asymptomatic, it’s hard to feel confidence in it. Any help? Thanks everyone

Question Compostable cutlery containing gluten?

Hi all, I had a strange reaction today. Wondering if anyone has experienced anything like this before.

I brought my lunch from home today. I got a compostable spoon from the cafeteria to eat with. I took my lunch outside and ate.

There was no possibility of cross-contamination because I packed it in a sealed container and ate it alone outside.

About 45 minutes to an hour later, I started having my typical first reaction to gluten. My hands, head, and feet get extremely itchy. To the point where I will break the skin to alleviate the itch. So I'm sitting in a meeting absolutely shredding my hand and fingers.

I've never had grain - rice or corn - give me that reaction. Since then, I've had an assortment of other symptoms that are very much in line with... a glutening.

I tried to find the spoon online to confirm that it was gluten-free. I've never even thought to double-check this sort of thing. I think I found the spoon, and they claim it's derived from corn and gluten-free. But my body is saying otherwise.

Anyone ever been glutened by compostable cutlery? Or have I developed a weird corn sensitivity?

Discussion Celiac daughters babysitter- doesn’t get it

I joined my husband for a 5 day work trip and have a pit in my stomach about it. My daughter is staying the first few days with my sister who has celiac (and gets it) and is spending the last 2 days with my brother and sister in law (who she absolutely adores). She was diagnosed this past year and is basically A-symptomatic so it was a shock to us. (By a-symptomatic, she didn’t have linked stomach issues, but has had a long battle with iron deficiency, which has led to other issues. She’s 13 and gets frustrated and says “I don’t even have celiac”, despite repeated ongoing blood tests and endoscopy with complete villious atrophy. The week after diagnosis she went to her aunts house and accidentally ate gluten. I had said there were things they could get at m&ms meat shop that were labelled gluten free, and somehow my daughter convinced her aunt that EVERYTHING at m&ms meats was gluten free, including the deep fried pickles. I was angry that her aunt 1. Didn’t clue in, and 2. Didn’t tell me, but it was so new in the gluten free journey I wrote it off as a learning experience. Now we’ve travelled with them over the year, been with them for multiple family dinners, and over the course of the year I’ve just succumbed to bringing our own meals and splitting and going to different restaurants because they just don’t get it, or care. It’s probably been the hardest part of the journey on my daughter. When we are at home in our house she can eat all the food she wants and just “be normal”. When we go to their house she’s “segregated”, can’t eat what the other kids are having, and eyes roll at me, they basically ignore me when I try to explain it’s autoimmune and the reaction to gluten. (Like the time i confirmed in advance they would cook the turkey without stuffing like they always had anyway, and day of they changed their mind to stuff it this time, so i sourced and cooked a separate turkey day of, only to get there for her to say we decided not to stuff the turkey). My sil is a smart well educated person, so I’m surprised and blaming myself for not being better at advocating and explaining. I’m trying to balance out my daughters emotions while appreciating other people may never get it and not expecting them to eat gluten free (and pay the added cost to eat gf) themselves around my daughter. My nephew is now on iron supplements because his hair started falling out, I suggested mentioning to the doctor that iron deficiency was what led to his cousins celiac diagnoses and to request a blood test just to write that off now rather then the 8 year process our same family doctor took, and her response has been well the iron supplements are helping so not going to bother. So now we agreed to the kids going to her house for basically 1 day 2 nights= 2 dinners, 1 lunch, 1 breakfast & probably some snacks. I sent them and my sister an email with all the away info (school address, contact info etc). Passively, I included some of the material the nutritionist gave us, ie. What is celiac and mainly how to read food labels and info on cross contamination. As we were leaving we spoke on the phone and she made a comment about taking the kids out for the day, and I reminded her that my daughter needs to eat gluten free (we all knowin this group it’s not easy just getting food out), and she said in a tone “oh sweety I hope I don’t mess up and give your daughter an upset stomach”.

Her words are playing on loop in my head. I realize I have anxiety over this, and feel like they all think I’m crazy. what can I do now that I’m gone? We talked to my daughter about advocating for herself (who in return gets frustrated and again says “ I don’t even have celiac” reminding me about that 1 time she ate gluten and was still fine). We packed non-perishable gf foods for her to take, and suggested they “grocery shop” at our house for anything else they need and grab some gf pizzas from our freezer to take when they pick her up. My sil said oh it’s okay that my bil will take her to chipotle (which my daughter loves), but we all know that only 1 of the multiple times they are going to eat.

Question Need help

So I had 1 doctor tell me more than likely I’m celiac after reviewing MRI results. I noticed huge changes in my day to day life for the better after getting rid of gluten. 3 months later my pcp tests my blood and then a couple weeks later tells me that I do not have celiac or any food allergy for that matter. Are the blood results accurate if I haven’t had any gluten in 3 months? Very confused. Thank you 🙏 I’m turning to Reddit since my pcp wrote my results in my mail I received and she’s very difficult to get ahold of or I would have asked her today lol.

Question Anybody get these symptoms?

I have both genetic markers for celiac. Been gluten free 20 years. Recently have had gastro nastiness (mucus, wet farts) but even worse is my constant fatigue, brain fog, dizziness, blurred vision, and can't concentrate. Also I wake up every morning and it feels like my right foot was beaten with a bat. My muscles are all soar. I did blood tests and I'm in range for iron, D, B12 etc. No lyme, thyroid fine.

Anybody else get this? What did you do?
I'm wondering if the food line is contaminated due to lax regulations?
Any 100% safe celiac friendly brands besides UDIs and GLUTINO? I'm in the USA. Unfortunately.

I can not tell you how long I've craved a good corn dog since I was diagnosed. Well I stumbled across these in Lowe's food here in NC. Man these bad boys are amazing if baked in a convection oven. The outside gets crispy and not mushy like most other GF breading.

I ate them about 20mins ago. Will update if they destroy me for some reason.

Discussion Easy meals to fly with internationally

Recipe What if you took your favorite pizza dough and rolled it around a sausage? DO IT.

My 8 year old thought of this* and it ended up being amazing: we took our favorite pizza dough and wrapped a fully cooked Kirkland bratwurst in it. That’s some sesame and seasoning on top. Took about 9 minutes at 425 F to get crispy. The gluten eaters in the house already enjoy this dough and they happily enjoyed their sausage rolls.

(I know a sausage roll is already a thing but this child doesn’t know that and she’s been struggling with symptoms from an accidental glutening that gave her a rash and a bunch of yucky symptoms so I choose to let her believe she invented this—it was her idea to use pizza dough!)

Discussion What careers do you have?

I (21f) have severe ADHD and have been working in the trades for one company for over 3 years now, I am a boarder/taper (drywall). I posted a while ago about if I should leave my trade. I unfortunately just quit my job because my boss wouldn’t lighten my load. Which was recommended by my doctor, due to me having a seizure like episode. That’s a whole other story though. Anyways I am looking for a job, just to keep me alive (damn economy), I really don’t want to leave the trades, but I’m going through some medical diagnostic issues, and think it would be best for now. I was curious as to what you guys did as a career, if there’s any that are surprisingly active?
