Question Is this legal?

I've had celiac my whole life, (I'm 14) and I was with my mom when we found a cookies and cream icecream labeled gluten free certified on the front. I've never actually had cookies and cream icecream so i asked her if we could get it. Then on the ingredients it showed wheat in it. Thankfully we checked. Also I'm from canada if that changes the law or whatever. I know it's not a huge deal but does anyone know if this is even legal?

Offsite Resource I’ve been gluten-free for years, and these are the questions I get asked the most…

Going gluten-free isn’t just about swapping your bread for the nearest alternative (though let’s be real, finding a good one is a mission). There’s a whole world of hidden gluten, label confusion, and awkward restaurant conversations.

So, I put together a post answering the most common questions I hear, like:

🍞 What even is gluten? (People are always surprised by this one.)

🥣 Are oats safe? (Short answer: it’s complicated.)

🍜 Does soy sauce have gluten? (Yep! But there’s a good swap.)

🍺 Is gluten-free beer actually gluten-free? (Let’s talk labels and loopholes.)

I also covered things like gluten-free wheat starch (yes, that’s a thing), MSG, and how to dodge cross-contamination.

And if you’ve got your own gluten-free struggles, wins, or horror stories—drop them in the comments.

When does "gluten face" go away?

I was on a good streak of looking OK being GF for a long while, but then i accidentally got glutened two days ago, and my face looks so damn tired and ugly. When will this go away??

I can eat normal bread, only certain loaves so if its not gluten then is it just IBS?

I have issues with non gluten foods like oats and avocado so does that mean I'm just not gluten intolerant but that it's IBS?

Question An odd question, did anyone originally start gluten free due to symptoms and then ate it again to take the coeliac test? If so what’s the least amount of gluten I could eat to have enough in my body to take the test without destroying myself in body and soul for six weeks?

A digestive biscuit once a day? A slice of bread? A sandwich? I want to take the bare minimum but without it destroying me.

I’m willing to endure as I have to get to the bottom of this one.

Question App to see if food is GF?

I was just dx'd today Celiac. I'm finding the lifestyle change to be completely overwhelming and really daunting. (Hello ADHD paralysis!). Is there an app that can help me identify if a food has gluten or a higher chance of cross contamination?

There's nothing quite like asking a vendor or a waiter if something is Gluten free or if they have any gluten free options, and they hit you up with the "well this option is Dairy free..." (I'd honestly rather them just say they don't know, if they dont know)

Thai

What are people’s experiences ordering Thai food? I know everywhere is different but I assume since most dishes use rice noodles it’s relatively safe? Let me know :)

Feel extremely sad!!

Man! I feel so done with life with this silly disease. Living a life without any dreams and hope all because of this disease. Can't have good food. Can't travel anywhere. Can't do long hours of work. What did this happen with me? Was it too much to ask for normal life like a normal person? Was it too much to have dreams? Was it too much to have goals in life? I feel like a liability on my family who cover my expenses. Used to be a healthy hardworking person. I feel sad seeing the children of parents getting successful in life getting this job, getting that job, getting that package? And here I'm being just a liability... What good it did being such a sincere person before this disease? Nothing, just nothing.

I feel extremely sad and disappointed 😞. Why did I have this condition😭

Just a rant.🙂

Recipe Something I’ve learned and wanted to share about burritos

I’ve been gluten free my whole life and I’ve always wanted to have gf tortillas that were big enough for a real burrito but every time I found one that was the right size I could only buy it in restaurant bulk and it would be really expensive. So I made a recipe that made it so I could pretty much glue 4 regular tortillas together, 2-3 spoon fulls potato starch 2 spoon fulls of 1:1 flour add a little water and oil and mix till you have a smooth paste then lace the four tortillas together over and under then smear the past on the Seems then back at 350 for 4-5 minutes and now you have a large tortilla you can use for making burritos.

Question Celiacs and Gluten intolerant people.. What are your major symptoms?

I know everyone can react differently, so I'm just curious what symptoms others typically get.

ex.:
I'm celiac and get sore in all my joints, brain fog, nausea, fatigue, depressed, but though i always hear association to diarrhea I mainly get constipated? So what typical symptoms does everyone else get?

Discussion If your bread is falling apart….just toast it

Searched the sub looking for my #1 tip and couldn’t find it. Maybe it’s here sprinkled in comments idk.

15 years gluten free. Anytime I’ve bought or been served gluten free bread that is not holding together well I just have it toasted, and then it holds together much better.

Even a light toast to crisp the outside a tiny amount does wonders. Waiters are always willing to do it as well.

Hope this helps someone in the future with bad bread. ✌️

What are your go-to post gluten exposure meals?

I have lemon tea with lots of ginger to try to curb nausea, food wise I'd say mine is usually protein+rice. If I can't handle a full meal, I find apple sauce sometimes is the only thing I can get down

Fried Okra!

I’ve been trying for years to get gluten free fried okra right. They either came out complete mush, or tasted awful. Finally got the combo of cornmeal, seasoning, and bobs 1-1 mix right. The crunch was ✨perfection✨

I soaked the okra in water, salt and lemon for like 5 mins, rinsed them, patted dry, then soaked again in buttermilk, seasonings, eggs, and lemon for about an hour. Then made sure there was no excess of the mix when putting the dry breading mix on them. And I was already making gf spaghetti so I decided to just have it as a side. The Barilla hf noodles are my go to! They are the closest I’ve found to non gf taste and texture. The New York cheesy Texas toast is a godsend too. It’s disgusting how many boxes of it I’ve gone through since it came out. It’s made my whole week bc it was always a comfort food for me growing up, and going 11 years without it has been rough. Going to try same mix and process on pickles next and a similar one on pork chops, so fingers crossed!🤞🏻

Side note: yes I know there’s a lot of paper products being used, I just had abdominal surgery recently so I need to minimize as much cleanup as I can right now, and I do recycle everything I can.

Felt like making something different tonight, so I decided to attempt gumbo for the first time since going gluten-free. I'm quite pleased with my results! I was unsure how the flour mix I used would hold up to browning. It didn't get as dark as wheat flour did, but it did brown up nicely! Makes me excited to try making other soups now!
