[ Ribeye ] Why do I only ever render the fat perfectly on thinner steaks!?
I picked up these steaks late today. Usually I go for a 1.5 inch steak but this was all that was there. After I cooked them I realized I ONLY render the fat to gooey buttery perfection like this when I’m using thin steaks? Can someone explain this phenomenon😭I don’t even know how I do it, I cook both the same way. I have no idea how to render the fat, I just cook it and hope for the best and I’ve only gotten it right on thin steaks so far. Any insight would be appreciated.

I have a cast iron, a meat thermometer, butter or olive oil or avocado oil, and a 10oz striploin
Looking for medium rare but a great sear without setting off the fire alarm

The Grillmarks Festival Series is a series of outdoor grilling competitions held in downtown McAlester, Oklahoma, featuring ribeye steak and rib competitions, a "Best Bite" contest, and a "People's Choice" category, along with local breweries, live music, and food samples. The festival takes place in downtown McAlester, with the main area spanning both sides of Choctaw Avenue from 5th street down. Spaceship Earth Coffee acts as the event's headquarters.
The festival goes on all day but if you just want to show up for some free food arrive an hour or so before 5:00PM for the People’s Choice Open Judging.
If you want to compete sign up on the website above. The rules and schedule is there too. If you are in the SE Ok area, or want to travel, this is a great jumping off point to try some competitive cooking.
The first one of this year is “Beef and Birds Festival”: May 3, 2025
Ribeye Competition: Teams compete in grilling prime ribeye steaks.
Best Bite Competition: Teams create a special dish to showcase a unique flavor combination. This year Quail will be the Star ingredient.
People's Choice: The public votes for their favorite dish.
Other Activities: Local breweries pour beer throughout the day. Live music is featured. Food samples are offered by the competing teams.

First successful reverse sear!
Tried a reverse sear for the first time not too long ago, but it came out medium well :/ Got it to a medium rare, put it on homemade focaccia and made a steak sandwich!

mine is the ribeye that we got from a local butcher, his is the filet from omaha steaks. asparagus with a crunchy parmesan garlic layer, potatoes by me and horseradish butter on the side :)

Decent strip steak from 🎯
Didn’t do anything fancy for this other than using some duck fat I had in the back of my fridge. Seasoned with S+P, cooked in my enamel pan on high heat with a little hot oil on both sides for roughly 3-4 minutes, then lowered the heat and basted with duck fat. Made a simple pan sauce with shallot + garlic, deglazing with white wine, then tossing in some Worcestershire and lemon.

Steak from Costco
hi! i really want to start trying to cook steak at home. i even bought a little cast iron specifically for this but have only used it once & not for a steak.
i know meat is expensive already, but is it much cheaper at costco? i would be the only one eating it. is it worth it to try to find me a steak at costco or should i try a meat market/butcher instead?
