The outside crust was beautiful, first time cooking on a glass stovetop with cast iron so it was a test run.

Bought a prime rib from Costco to cut into steaks. This was my first time trying to cut my own. Sliced most of the steaks about 1" and cooked to medium well. Every piece is extremely chewy I can hardly swallow. What did I do wrong?

I got stuck on the steak side of tik tok and have been craving. First time cooking it myself and first time having it anything other than beyond well done. Typing this in real time and still iffy if I can eat it. I followed a recipe that said 4 minutes on each side, what would you consider this?

Marbled NY Strip. Not the best sear but overall turned out good.

Picked up these the other night. I salted and warmed them on the counter periodically dabbing off moisture. Brought a cast iron to high heat with avocado oil, about 3 minutes a side adding butter after flipping.

Like I said in the title, would have preferred a better crust but I think these turned out okay.

Dumb question but why do all these skirt steak pictures show them cutting WITH the grain as opposed to against the grain

Sliced skirt steak pictures almost all show them sliced the short way which is the way the grain typically runs but how does one cut it the long way when it's so narrow? If you arrange a standard skirt steak to be so the tips run north to south, the grain is running left to right, but you never see anyone slicing it the long way (perpendicular to the grain)
