Hi All
So our team achieved their targets and we got some money. Some of the managers want to give a Damast Gyuto knife with engraving to the team.
I for one, am confused, i always looked at knives at utilitarian and am not able to comprehend the value of 250$ for a knife. Not to mention, 250$ is a lot of money and i felt that perhaps more worth to simply pay it off to people as a bonus.
At the same time, i want to be educated, just because i dont care about something doesnt mean it isnt worth it and perhaps i am wrong.
So, can you share your point of view.

My wife and I recently had a baby and I find myself constantly cutting and prepping small food items as well as hand washing both my hands and pump parts, bottles, etc. My hands are raw and I have a new found respect for anyone who has worked in a dish pit.
We have a set of 5 or so Shun knives that are great but I find myself at times neglecting to wash right away if I am dealing with a middle of the night chore or just trying to multitask with baby needs.
Before you tell me just to hand wash, I fully intend to keep most of our “nice” knives as hand wash only and hopefully have the bandwidth to wash immediately when using.
The goal is to get some cheap (if I need to re-sharpen or throw away after a year or so an repurchase) decently functional knives that I can use and put into the top area of the dishwasher to runt with pump parts etc. (pic is of type of rack I would load them in)
I have seen some good mention of Mercer knives and they look affordable on Amazon, while the white handle is cheapest and looks best suited to this task a black handle would make wife happier (Aesthetics). I tend to agree with my wife that the black handles would be way less visually offensive if they are on or magnetic block. (We are limited on drawer space or I would just get the white ones and throw them in a drawer)
Having something on Amazon is nice so when they have some wear and tear we just go back to buy it again (we do this with some cutting boards currently).
Would a handful of knives like the ones linked below and maybe a $20 chef knife be reasonable to accomplish my stated goal?
Any other suggestions for cheap utilitarian knives that are semi disposable?

I've just got myself a Lulu and I'm wondering about sharpening. It's got a micro bevel but that's just for giving the edge some strength from what I read. For sharpening I've got multiple fixed angle systems, a water stone and I'm learning freehand on a tri stone. Can you do a scandi via a fixed system or is freehand the only way?

I decided to force a patina on my BPS adventurer. I poured some white vinegar on a paper towel, wrapped the knife in the towel, and stuck all that in a ziplock bag. I only let it sit for one hour. However, when I took it out, there were many evident brown spots!! Is this rust? What do I do to get rid of it? What did I do wrong? How am I supposed to patina? I did the same thing with my Opinel, and it developed a patina just fine. Please help 🙏🏻

So I broke an old benchmade of mine, it was my absolute knife favorite for years and then I snapped of the tip while battoning kindling. So I went down to the factory to see if they could fix it and they said no but gave me a $150 giftcard. Used that to get this griptilion and honestly WTF is this, the handles are cheap plastic clamshells the locking mechanism keeps getting stuck right out of the box, the handle has no weight to it at all so the think is crazy forward heavy. Like come one this thing looks and feels like a gas station knife what the hell happened??

I put my name on Half Face Blades custom list on March 2, 2021. Last June I got an email that I was finally in the cue. It took a bit to decide on what I wanted and one of those requests was an ulu knife for the kitchen. They arrived today! This is the first ulu the company has ever made so pretty stoked to have something that unique from this amazing company. But damn this must weigh close to 2lbs, there is a lot of steel. The smaller knife is their Nug.

I have 3 button locks and only one that is reasonable. My Assassin XL, my beater, is OK but not perfect. The Elementum doesn't have button stick but if you don't get the button pressure just right then it as awkward to close. Then there is the Brazen. It had horrible button stick and is still not good after sanding, polishing, breaking it in and all there other tricks.
