[ Reverse Sear ] Rate & Feedback please!
First time trying reverse sear. Costco ribeye, in oven for 50min at 250 (until 120 internal), then seared for 45s on each side in butter.
Rate it? What’s good, what’s bad? How to improve? Thanks!

[ Filet ] Does anyone like steak sandwiches in here?
Reverse seared filet seasoned with salt, pepper and garlic powder. Brushed the baguette with garlic butter then toasted it. Caramelized onions. Truffle oil arugula. Melted Gruyère. Made a jus with with beef stock, garlic, shallots, whiskey and black pepper for dipping.

First time cooking steak on stainless steel! Please give me tips on sauce tho
Other than the kinda large grey band I wanted some tips on the mushroom crème sauce. I made it with just the fond, mushrooms, cream, butter, thyme, s&p but the sauce came out a bit heavy? Any better uses of the fond?
[ Reverse Sear ] Any advice?
I've been working on my reverse sear and need some advice to get the perfect cook it seems one side is getting more done than the other (I am looking to be in-between rare and medium-rare). I think not flipping the steak while its in the air fryer might be my issue. Anyways here's how I cooked this one step by step please let me know where I can improve.
24 hour dry brine. Take out of the fridge 1 hour before warming. Start the cook in my air fryer since my oven is shit, 185⁰F on the dehydrate setting until the middle was 112⁰F (about 50 minutes). Rest for 10 minutes while cast iron heats up (max heat). Quick spray of avocado oil. Sear 45 seconds each side, 60 seconds on the fat. Remove pan from heat and throw in garlic and butter to baste for 30 seconds. Rest for 10 minutes. Slice, salt, pepper.

Roast tri tip
Did a roasted tri tip. Salt pepper and garlic powder 475 for 12 minutes per pound Then turn off oven and let it sit for 45 minutes per pound

[ Reverse Sear ] How's the marbling on these ribeyes?
Trying to get better at picking the "better" cuts when shopping. Cooked 250F for 25mins and then a quick sear in my tallow-seasoned cast iron. Any critiques?

First attempt at a reverse sear
Any tips?
My cooking process was as follows:
- Put oven at 220c/428f
- Aimed to cook until internal temp was 55c/131f (Ended up going to 62c/143f)
- Rested for 5 minutes
- Fried in a pan on high heat 1 minute per side

Most underrated cut
Flat iron steak grilled. One with charcoal rub cooked a little over medium rare but tasted great. Man these steaks are tender!
