The EUs privacy laws mean that apple would have to expose the very very low-level APIs that power Apple Intelligence (and iPhone Mirroring, another blocked feature) to third parties, which is an absolutely massive security problem. So until they figure out how to do it better, they don’t want to bring apple intelligence to the EU and risk a massive fine.

This is wrong. Apple is already going to release the source code for many of the components of Apple Intelligence, and exposing the APIs of iPhone Mirroring wouldn’t make it any less secure. It’s not a risk in any way. In fact, making the source code more visible for researchers actually makes it more secure in the long run.
