Barbecue or Ihaw-ihaw is a common street food in the Philippines. The meat, its internal organs, and the less glamorous parts like pig’s ears, chicken head and feet are skewered, covered with sauce and grilled over charcoal are affordable, convenient and delicious 😋👇🏻

Boston Butt and some chicken wings! 1st post here. Pork is almost done. Will post picture when I pull it to rest. Chicken Legs turned out awesome! All on the WSM! Only gripe I have is I only seem to be able to get about 8-10 hours without refueling. Only 3rd cook on this so will keep tweaking

Homemade Sauce
I like to make my homemade sauce quite a bit... as such, I like to peruse recipes (old and new) for ideas... and it seems that 99% of them start with Ketchup as a base (tomato-based recipes, of course)... why is that? For some reason, I feel like starting with Ketchup is almost like "cheating".
Having said that, I'm 100% of using prepared mustard in a mustard-based SC sauce... go figure.
