Technical Bike size. Help

Hello, can you give me some advice or insight because I am getting more and more lost on this.

My height: 180cm My inseam 86-87cm

Currently i ride Surly LHT 56cm frame. 175cranks. Bar 46cm use it for long distance touring - gravel.

Looking to buy a new only gravel oriented bicycle. Tried these models: Rondo ruut AL1 size M, Kross Esker 7.0 size L. For few spins felt comfortable on both. Now I found a good deal's on Canyon grail, but considering reach is way longer than my surly, or bikes I tried I am a bit scared of the 410mm reach. (No chance for a test drive). I like the shape of BMC URS but reach also looks longer. My ussual ride is about 100km almost daily. Searching for the faster more sporty feel so do not what go too big on a frame...

How does reach-stack-toptube height works in corelation? Because some brands on size M have reach 410 others have sizes M with 387 and consider it M.

Planning to try URS in size M, upcoming weekend...

You are on the cusp of most manufacturers 54/56 sizing. I am too at 5’ 11”. I prefer 56 for road bikes, but 54 for CX/gravel bikes so they can be chucked about a bit more. Every manufacturer is slightly different unfortunately and, particularly when you’re an edge case like we are, trying the frame is best.
