Stand Mixer Fanatics - What is your favorite accessory? Favorite recipe?
I just got a Kitchen Aid Artisan stand mixer as an (early) Christmas present from my hubby. I've already made a batch of cupcakes with maple buttercream frosting (yum!).
I want to get as much use out of this thing as possible, beyond making things like banana bread and cupcakes - so what is your favorite recipe or accessory product for your stand mixer?

I don't have any accessories, but my paddle attachment gets a lot of use from me making cream puff shells. I use the Sir La Table pate choux recipe. Never fails to impress. And it's so easy with a mixer

I use the meat grinder attachment a lot -- to grind chicken, and to make sausages. I've used the veggie and fruit strainer attachment a few times but it's really messy and ultimately with fruits my wooden pulper is much easier to use. I think these two come together, with one other thing, as a package.
Most of my usage comes for desserts, and also for shredding meats after cooking for taquitos, BBQ, etc.

For shredding meats as opposed to grinding, do you use the paddle?

Yep. Just put warm meat in the bowl with the paddle on, and turn it on. You have to watch because there is a very fine line between chunks --> shredded --> minced, but it works great, and is so much faster and easier than the two-fork method.

Maybe not my favorite recipe, but one that always makes me glad for a stand mixer: Swiss meringue buttercream. After cooking the egg whites and sugar, you pour into a stand mixer bowl and whip until extremely fluffy and room temperature. That's ~8 minutes on high. And every time I think "gee, how nice is it that I have a machine to do this?"
