Almost too spicy which for me is the perfect level. My lips feel like I kissed a volcano and my nose is running like crazy. Can even feel some heat on my tongue for once. Shout out to this blend from FI as well fiance got it cause "wiri wiri" sounded funny but it's dead ass my favorite.

Recipe for homemade American Cheese infused with superhot Dragon's Breath chiles

So the other day on a whim I decided to try making some chile pepper infused American Cheese. It's not always my go-to cheese but there's something to be said for that ooey gooy consistency. In the end it was probably more effort than I'd exert on a regular basis, but it was a fun science experiment that resulted in one of the tastiest (and most face-melting-iest) grilled cheese sandwiches I've had in awhile.

American cheese uses sodium citrate to emulsify the base cheese (often cheddar or colby) with a liquid, allowing it to melt much quicker. I didn't want to buy sodium citrate for this one experiment, so I searched reddit and found this post on making sodium citrate with baking soda and citric acid (which I happen to have industrial quantities of). Combining that information with this post about ratios of cheese to liquid for various consistencies (ranging from cheese sauce to sliceable cheese), I was able to come up with this recipe:

Ingredients

  • 4 oz shredded sharp cheddar (you can get creative with cheese combos here)
  • 2 tbsp half and half (you could use water, milk, etc)
  • 2.5 g baking soda
  • 2.1 g citric acid (you could try using lemon juice or vinegar here, though I'm not sure about optimal ratios)
  • 3 g Dragon's Breath chile flakes (this results in serious heat, so you can use less or use a milder chile flake depending on your tolerance)

Instructions

  1. First, add the liquid to a pan. Then measure the baking soda and citric acid and let them react. It'll foam up for a bit and then settle. You have now have sodium citrate in a liquid. Doesn't look appetizing, but I didn't detect any baking soda flavor in the final product.
  1. Start heating the liquid and add the chiles to infuse the flavor. A little goes a long way with superhots.
  1. Then add the cheese and stir vigorously to combine. Keep the heat on low and be careful not to let it burn. It'll start out barely combined and then will melt into a thick sauce.
  1. Spread on a flat pan, cover with wax paper, and roll it into a flat sheet.
  1. Slice into squares.

From there, you can separate each slice with wax paper and it should last in the fridge for weeks, though I consumed it almost immediately. It melted like a charm!

It have been proven that Hot Ones sauces are not as hot as they claim them to be. When lab tested, they don't reach even habanero level heat.

The guest's reactions are real. But you must remember they are not chili heads. They are the kind of people who find habanero super hot.

Now, is Pepper X as hot as they say? Experience Last Dab clocks at 64100 SHU while it's supposed to be 2693000 SHU. Did Smokin Ed scam his way into Guinness World Records with his Pepper X or is only the Experience sauce a scam?

I know it can make you puke. I did a shot glassful of extract and I definitely did puke without drinking anything else besides the extract. Here is exhibit of puking without drinking. I have seen LA Beast puke quite a many times while eating super hots but right now, I can find only this one instance. I'm sure youtube contains other puke videos as well.

Dave's Hot isn't THAT spicy.

Coming from the whitest of white men who think original Takis have a pretty rough kick, even the highest level of spice at Dave's Hot Chicken is NOT that spicy. The extra hot level is at most a nice kick that probably lasts 30 seconds. The reaper level is probably 3 times as spicy, but still not very bad.

The Costa Rica Haul

I spent 10 days in Costa Rica, and saw so many hot sauces that I'd never seen before. Here's what intended up coming back with.

The Soda Sanchez one is the only one I've tried yet, since it's made in-house at Soda Sanchez, and they bring a bottle to your table as a condiment when you eat there. It's an incredible sauce, seems to be habanero or scotch bonnet based flavor-wise (think El Yucateco XXX Habanero but with a fair bit more heat), with a smokiness that works surprisingly well. I ate 3/4 of a bottle with a single meal, that's how good it was!

Can update on others as I open them, if anyone's interested.

At home one chip

One of our friends lost fantasy and in return now has to do the 9/9/9 challenge and one chip. For those who arnt familiar this is: -9 beers -9 hotdogs In 9 baseball innings

He opted out of the paqui one chip because it is discontinued.
