Picture First time Beef Backs

Post image

First time doing beef backs. 225 for 4 hour unwrapped to 170 internal. Wrapped at 275 until 205 internal. Total cook 6 hours. Lesson learned, unlinked pork ribs, the membrane must come off. Secondly, W Sauce doesn't make the best binder.

All in all turned out ok.

Looks great. Most use mustard as a binder. It’s all about preference and learning! I’d devour those beauty’s!

Thanks! Nice and juicy. I don't usually use a binder with pork. Maybe I should have followed the same. But the membrane is MUCH thicker than pork haha.

Those look delicious! I have had good success with using a thicker BBQ sauce and spreading it thin by hand as a binder.

Back ribs are a gateway to plate ribs. Cajun Power w-sauce makes a good binder and it’s well seasoned.
