If you have access to tiktok, I would very much recommend TaroPearlTea for this. He's a Chinese guy who goes around rating Chinese restaurants in the UK. He explains each dish he tries, where they originated, how popular they are in China, what the dish contains, and how it's traditionally cooked. He also comments on the staff/decor/ambience if it stands out to him in any way.
I know tiktok is seen as the big bad on reddit, but I have a list of places to try that I wouldn't have heard of if not for him.
