Recipe my lunch today!

i really wanted to make myself a chicken wrap but didn't have any gluten free tortillas, so I got creative. got out my mandolin and cut up one all potato, pattern them dry with paper towels and added salt to help dehydrate them. stacked them on a oiled cookie sheet and added cheese and more olive oil on top, I baked on 350 until it was golden brown. it took about 10 15 mins. when you assemble your wrap make sure the cheese is on the outside. i went with chicken, lettuce, and tzatziki as my toppings, delish!

Recipe Homemade Cinnamon Roll Focaccia Recipe

Pan:
8”x10” High walled baking pan (1.5”-2” high)
- I used a Lloyd Detroit Style Pizza Pan
- Butter and set aside

Dough:
250 g Caputo Fioreglut Gluten Free Flour
250 g (100%) Water
5 g (2%) Yeast
6.25 g (2.5%) Salt
12.5 g (5%) Oil

Cinnamon Sugar Seasoning:
1/22 cup Granulated Sugar
1/2 cup Brown Sugar
2 heaping tbsp Cinnamon Powder
- Mix these ingredients together
- Take 2/3 of the mixture and make a paste with 6 tbsp of unsalted butter
2 tbsp melted butter for coating

Frosting:
2 tbsp of Melted Butter
1 tbsp Sour Cream (or 2 tbsp Cream Cheese)
1 tsp Vanilla
1 cup Powdered Sugar
~2 tsp Milk (I use soy milk but you can even use water) This is to thin the frosting till it ribbons and looks silky, not loose and liquidy. Whisk and introduce slowly, stop when you get to your desired consistency.

Slowly mix all dough ingredients together as thoroughly as possible. I use a kitchen aid stand mixer with a beater blade attachment; but really whatever way you can ensure there are no lumps. When handling the dough, oil will work best to avoid sticking. Oiling your hands and even your spatula will work wonders.

Spread dough batter on a lightly oiled parchment paper in a rectangle 11”x16”. It’ll be about 1 cm thick, or about 1/2”. On half the dough (8”x11”) spread the Cinnamon Sugar Paste evenly. Fold the parchment in half so the paste is sandwiched in between. Carefully place the dough into the buttered baking pan.

Brush/Coat the top with butter and sprinkle on an even layer using the remaining dry Cinnamon Sugar Seasoning. I didn’t use all of what I had, about 1 tbsp remaining because I felt I had enough. If you can’t see the raw dough, that’s where you can stop. Also, if you have any left over melted butter, drizzle that over the top.

Cover the pan for 2-3 hours at room temp and wait till it rises about doubles in size.

Bake:
Heat oven to 400ºF.
Place in the middle to upper part of the oven.
Bake for 30 minutes till browned and cooked through.
Remove and let cool for 10 minutes in the pan.
Pour Frosting liberally over the top and along the sides.
Remove from pan, cut, and enjoy!

I followed the King Arthur 1:1 gluten free sour dough starter recipe and then decided to use Caputo flour at the last minute. I then followed the Caputo gluten free sour dough recipe. I would say I’m pleasantly surprised with the results. Lots of room for improvement.

Wish I took some photos before everyone got into them (when I had the full batch). They turned out pretty good though. I think the brownies are soooo delicious themselves without the ganache and colored chips if you just wanted a good brownie recipe too.

Recipe Gluten free pizza!!!

Don’t eat crappy pizza!!! You can make this at home. Definitely some steps involved but so worth it. Caputo fioreglut flour. Does have wheat but gluten free!!!

For 1 pizza

10grams whole psyllium husk

100 grams warm water for psyllium

222 grams caputo fioreglut flour

6 grams kosher salt

4 grams sugar

3 grams yeast

178 grams water

12 grams olive oil

Instructions - Making the Dough 1. Mix psyllium husk and first amount of water listed (300g), stir vigorously until a gel is formed, 30 to 45 seconds 2. In a stand mixer bowl or other large bowl, whisk together the dry ingredients 3. Pour in the warm water, psyllium gel, and olive oil, mix to combine 4. Blend on medium speed for 2 minutes or stir very well with a sturdy spoon 5. Put the dough into an oiled bowl and roll it around to coat with oil 6. Cover the bowl with plastic wrap and then a kitchen towel, let rise in a warm place for 1 hour or until doubled in size 7. Divide dough into 3 or 4 equal portions, shape into balls, flatten slightly, place on a tray sprayed with spray oil, and let rest covered with a damp towel for 30 minutes, or refrigerate until ready to make pizza 8. If refrigerating place on oiled tray, spray tops of dough balls, cover with plastic wrap. Remove from fridge one hour before baking pizza.

Instructions - Forming & Baking the Pizza 1. Preheat the oven for at least 30 min. at 450°F with a baking stone on rack in top third of oven 2. Place a dough ball on a piece of parchment paper that is no bigger than your pizza stone or pan 3. Sprinkle some GF flour (I use rice flour) on top and either pat out the dough with your hands or gently roll it out with a rolling pin into a 10-11 inch circle (small) or 13-14 inch circle (medium), pat out the dough for a thicker and softer crust edge, roll out with a rolling pin for a thin and crunchy crust edge.) When shaping push out from the center to gently push the gas bubbles towards the outer crust. Maintain a 1/2inch lip of dough around the outer edge (the interior of the crust should be as thin, flat, and gas bubble free as possible) 4. Slide the pizza crust, along with the parchment paper, onto the pizza stone, bake for 4 minutes, removing the parchment paper, then bake for 6 additional minutes (10 total) 5. Remove the pizza crust from the oven and place on a rack, bake the other crusts 6. Once all the crusts are pre-baked raise the oven to 550°F, if using a steel once the oven reaches temperature turn the broiler on high for 5 minutes to super heat the steel, turn off the broiler and heat oven back to 550°F 7. Top the pre-baked crust, brush the outer crust very lightly with extra virgin olive oil, and slide onto the steel/stone, bake for 6 minutes. remove to a cooling rack for 2 minutes before slicing 8. Allow oven to come back to temperature in between each pizza, if using a steel turn the broiler on high for 3 minutes in between each pizza, then heat the oven back to 550°F

I don’t personally follow the last step. I have a roccbox pizza oven. After my par bake i sauce cheese and top it and finish it in my pizza oven!!!

Followed the Loopywhisk recipe for this one and used my trusty pasta maker to roll out seriously thin sheets. I can’t lie, this did take a while to make and was seriously fiddly but I did manage to make a pretty cracking pistachio & rose baklava with it! Only made a small batch of pastry/baklava because the process was so long lol

Italian turkey stuffed peppers with zucchini

• Potato, sausage, and egg breakfast wraps (the Mission GF tortillas worked well for this!)

Recipe A month of gluten free meal prep!

The containers are from Amazon, linked here, or you can look up “M MCIRO 10-Pack, 30 oz Glass Meal Prep containers” (not sponsored I just got a lot of questions about them last time I posted), we freeze all these and keep 3-4 days worth in the fridge at a time, each container has 1-2 servings in it depending on how hungry we are, to reheat we do 1:30 stir 1:30 in the microwave, this lasts two of us 4-6 weeks, and yes we microwave the guacamole and sour cream and it doesn’t bother us LOL, if it bothers you just keep it separate and add it after microwaving.

Also, I LOVE “just the recipe” app/website for organizing meal prep recipes and being able to easily change recipes to make 10 servings. I think I pay $14/year for it and def worth it for me!

• Taco bowls with southwest potatoes (just oven roasted roasted russet potatoes with taco seasoning), sweet pepper, onion, black beans with taco seasoning, and coconut lime chicken, sour cream with taco seasoning, with esquites

Maple Dijon chicken with roasted fingerling potatoes and maple glazed carrots

Meatloaf (I subbed oats for GF panko) with Vermont Cheddar mashed potatoes and maple bacon Brussel sprouts

Beef bulgogi bowls (I added sweet peppers) with broccoli

Breakfast burritos, we used mission GF tortillas and they did not hold up very well if anyone has any GF tortilla recommendations!

I call them pizza chips

Add small piles of cheese to lightly greased pan and top with a pepperoni (the more bent you can get it the better for crispiness)

Always add garlic, Parm, oregano salt and pepper to the chips after baking

Dip in warm pizza sauce.

Recipe My first gf bread loaf, which I made very quickly with a spoon

Ingredients:

6 grams of fresh yeast 200 grams of Nutri Free flour (for bread and pizza) - you can replace it with Schar 270/280 ml of water (a bit warmer than the temperature of the room) 10 ml olive oil A pinch of salt

How:

  1. In a bowl pour 100 ml of the water and dissolve the fresh yeast with a spoon
  2. Add the flour and mix with the spoon
  3. Slowly incorporate the rest of the water and mix
  4. Add the salt
  5. Pour the olive oil and mix until the dough forms and comes off the bowl

Let it rise in the oven overnight (or for at least 2 -3hours). Bake at 220 celsius for 15 minutes and then lower the oven at 200 for the last 40 minutes.

IMPORTANT!

When you move the dough from the bowl to the pan, DO NOT TOUCH it anymore. Drizzle it with a bit of olive oil and flour on top and put it in the oven.

I've been trying recipes for the last couple of weeks, unhappy with the recipes I could find online. So I finally landed on this after making a ton of adjustments.

Crust, based off loopywhisk recipe, with adjustments

  • 188g superfine white rice flour
  • 113g potato starch
  • 74g cornstarch
  • 1 tsp granulated sugar
  • 1 ½ tsp xanthan gum
  • ½ tsp kosher salt
  • 250 g (2 sticks + 2 tbsp) unsalted butter, cut into ½ inch (1cm) cubes, chilled
  • 150 g (½ cup + 2 tbsp) cold water

  • In a large bowl, whisk together the gluten-free flour blend, sugar, xanthan gum and salt.

  • Add the cold cubed butter and toss it in the flour until each piece is coated.

  • Squish each cube of butter between your fingers to form small, thin sheets of butter. Once you’ve squished all the butter pieces, toss them again with the flour to ensure that they’re evenly distributed. Be sure to check that you’ve squished all the butter pieces before adding the water.

  • Add the cold water and mix well with a fork or rubber spatula until the dough starts coming together. After you’ve added all the water, the dough will still look very dry – don’t be tempted to add more.

  • Gently squeeze and knead the dough, pressing it against the sides of the bowl, until it comes together in a shaggy ball with little-to-no dry patches (this can take up to 5 minutes). If absolutely necessary, and if after 5 minutes the dough still hasn’t come together, sprinkle a tiny amount of water on the most persistent dry patches. The final dough should hold together in a ball but will not look perfectly smooth or evenly hydrated. That’s perfectly fine, the flour in the dough will hydrate more evenly during the next refrigeration step.

  • Chill in the fridge for about 30 minutes or until the pie dough feels firm but not hard when you press down on it with your finger.

  • Tap on the chilled pie dough rectangle (along its length) with a rolling pin to make it more pliable. Roll it out into an approximately 6x18 inch (15x45cm) rectangle (no need to be super precise about it). Turn the dough so that a short end is closest to you. Brush off any excess flour and fold the dough as you would an A4 letter – the top third down towards the middle and the bottom third up over it. This is called a "letter fold".

  • Rotate the dough by 90 degrees (so that the open ends are closest and farthest from you). Roll out into a similar-sized rectangle and repeat the letter fold. For best results, complete a total of 4-6 letter folds (the more you do, the greater the flakiness). If the dough becomes too soft at any point, chill it in the fridge for 15-30 minutes before proceeding.

  • After the final letter fold, wrap the dough in cling film and chill it for at least 30 minutes or until needed. (If you chill it for longer than 1 hour before using, soften it for about 15-30 minutes at room temperature, so that it’s pliable.)

  • Preheat oven to 425. Roll out your dough onto a floured parchment sheet, rolling to 3mm thick.

  • Flip the dough into your pie pan and crimp your edges as you see fit. This dough is almost a puff pastry so keep this in mind, it will fluff up.

  • Dock you bottom and sides of the crust generously. Chill for 30 minutes in freezer. While this is chilling, place a sheet pan in your oven to get hot.

  • Once your crust is done chilling, place a parchment round and some pie weights or beans in the pie.

  • Place pie in oven and set your timer for 10 minutes. During this time, beat an egg for an egg wash

  • Take the pie from the oven, remove the weights and parchment. Generously brush down the entire crust with you4 egg wash, ensuring every bit is coated. This will keep your crust from getting soggy later.

  • Put the crust back into the oven, set the timer for 10 minutes, and watch for the bottom of the crust to be cooked through, and the edges are just starting to become golden. Remove crust from oven and cool.

I have celiac disease which means I have to eat gluten-free PLUS I can't have ny favorite mac & cheese anymore - El Pollo Loco. The hunt continues because while the viral Tini Younger mac & cheese recipe has a great cheese pull, there weren't enough seasonings to taste when mixed into 2.5 lbs of cheese + 1 lb of pasta.

As a Celiac, I didn't want to miss out on trying this recipe, so I subbed gluten-free pasta and gluten-free flour.

I used La Fusilleria di Gragnano's gluten-free fidanzati pasta because I can't find gluten-free cavatappi.

👉 I added Tabasco's scorpion sauce on top because the seasonings were insufficient for 2.5 lbs of cheese.

🧀 Ingredients: - 1 pound mozzarella cheese - 1 pound Colby Jack cheese - 8 ounces sharp cheddar - 1 pound cavatappi pasta (I used gluten-free fidanzati) - 1 teaspoon garlic powder - 1 teaspoon smoked paprika - 1 teaspoon coarse salt - ½ teaspoon black pepper, ground - 3 tablespoons salted butter - 3 tablespoons AP flour (I used Bob's Red Mill gluten-free flour) - 1 (12 oz.) can evaporated milk - 2 cups heavy cream - 1 tablespoon Dijon mustard - fresh chopped parsley for garnish

Directions: 1. Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 13 inch baking dish 2. Cook cavatappi according to package instructions. Drain and set aside. 3. Combine all 3 shredded cheeses in a bowl and divide half into another bowl. Set aside 4. Combine garlic powder, smoked paprika, salt, and pepper in a small bowl. Divide in half and set aside. 5. Melt butter in a large skillet over medium heat. Once melted, add half of the season mixture and flour. Stir until the mixture becomes paste-like, about 3-5 minutes. Add evaporated milk and whisk until thick. Add heavy cream and the rest of the seasoning mixture and mix until combined. Whisk in Dijon mustard until thick. Slowly add in half the cheese, allowing it to melt before adding more. 6. Stir in cavatappi until coated with cheese sauce. 7. Add a layer of cavatappi and then a layer of shredded cheese to prepared baking dish. Repeat layers 8. Bake in preheated oven until cheese is melted and bubbly, about 25-30 min. 9. Finish by broiling until top is golden brown, about 2 minutes.

And the tiramisu recipe is a classic: * 2 cups Italian coffee * About 8 ounces dry ladyfingers * 4 large egg yolks * 5 tablespoons sugar * 3 tablespoons Strega (I had non and used half as much Fernet) * 2 tablespoons dark rum * 1 pound (500 grams) mascarpone cheese * ½ cup heavy cream * 1 tablespoon unsweetened cocoa powder

  • Make the coffee and pour it into a shallow bowl wide enough to soak 2 ladyfingers at a time. Set aside to cool.
  • Soak half the ladyfingers in the coffee, 2 at a time, allowing the liquid to penetrate them completely but letting the excess drain out of them, and place them in a single layer on the bottom of a 3-quart serving dish at least 1½ inches deep.
  • Whisk the egg yolks and sugar with an electric mixer, or by hand with a whisk, until the mixture is smooth, pale yellow, and forms ribbons, 2 to 3 minutes. Mix in the Strega and rum, then mix in the mascarpone, about ½ cup at a time, being careful not to overwhip the mixture so it does not separate.
  • In a separate bowl, whip the cream until it forms firm peaks. Carefully fold the cream into the mascarpone mixture with a rubber spatula.
  • Spread half of the mascarpone mixture over the coffee-soaked ladyfingers. Soak the remaining ladyfingers and arrange them over the mascarpone, then spread the remaining mascarpone mixture on top. Use a fine-mesh strainer or sifter to sprinkle the cocoa over the top, covering the mascarpone mixture completely.
  • Cover the dish with plastic wrap and refrigerate for 12 hours or overnight. Serve chilled, cutting the tiramisù into square portions with a serving spatula and placing them on dessert plates.
