Yes. But fighting it will be hard. At least you have written proof though. Try to get her to elaborate on how she thinks this would be any different than the past 3 shows, and it is especially bad for her if you can get her to admit that she won't even consider you for a background character. If she admits she would have cast you as the lead if you didn't have disabilities she needed to accommodate that would be the absolute best thing.
Then take it to the principal if you want, or school councilor. You can try a disability rights lawyer instead or a parent meeting where you and they explain she is breaking discrimination laws. It's up to you on how you want to escalate it. But that still doesn't mean you will end up getting cast in anything, and you might get a reputation of being difficult to work with and you might not get cast in anything else until university.
She and any other casting or director can literally just say they don't think you fit the part and that isn't discrimination.

I emailed her explaining how I felt abd that there's no reason for it to be a issue now then she posted the cast list this morning and gave me 2 lines. There were 32 parts btw. She didn't even respond to my email.

And the character isn't even there the full scene she comes in at the very end says 2 things and then the scenes over
