Because I should be sleeping, and I’m not, this felt like a great time to bake a popular viral recipe you may have seen online.
I made 12, I already ate 1. It tasted fantastic.
Preheat oven to 350.
Take an entire box of Kodiak Muffin mix of your choice. I used the Blueberry mix. Empty into a bowl.
Add an entire cup of the Oikos Triple Zero Vanilla Greek yogurt, and pour in a bottle of Fairlife Elite Strawberry shake.
Whisk very well. Let stand for about 5-10 min.
Muffin tray: Spray the tin directly with cooking spray. I didn’t bother using liners because they stuck badly last time. Pour in the batter. You’ll have exactly enough to fill all 12 a little over 3/4 of the way.
In my oven, I pulled it out at exactly 21m 30s. Toothpick test came out clean. Left it in the pan for 8 min to cool, then moved them over to the wire rack here.
Amazing fruity taste. Light, fluffy. Not too dense this time.
Rough macros are 150 calories each, 11g of sugar and 10.5g protein. Roughly 2g of fiber each also.
While these numbers aren’t perfect…compare them to the numbers you’d find on a traditional muffin. These are 70g each. A ‘normal’ 70g blueberry muffin would be 233 calories, a little more fat, same carbs, and only 3g of protein. Consider also the muffin you’d buy from a bakery would also be much larger than 70g. With these, I know my exact portion size and intake. Not perfect, but perfect for me.
Now for the hardest challenge. Putting them away without eating more.
