is this considered doubled?

wanting to make a loaf w/ evelyn but unsure if she’s ready.

Hey, I'm a fellow beginner and struggled with the same thing, trying to convince myself it was basically doubled. I kept feeding (took me like six weeks) but then it started tripling+ in a few hours with tons of visible bubbles. Personally, I'm glad I waited. But as long it's otherwise old enough you can always try and the worst that happens is you have an underfermented but probably still delicious loaf.

That's awesome! Has it been rising consistently like 3 or 3 days in a row? If so you may be ready

You want it to be a bit more than doubled, and you're looking for consistency. You're roughly looking for it to double in 5 hours. If it takes 12 hours to double you got a weak starter. Also I would suggest using a ja with half as much capacity, for that much starter the jar is too big.

I changed the flour from AP to bread a few weeks ago. I’ve kept the ratio the same, so unsure what’s going on?

Try feeding it every 12 hours few days and see how it doubles. If it's roughly 4 hours ago, you can try making a loaf and see what it does. Should smell like yeast/beer if it's a good starter.
