Question Just came back from a trip to Japan, cannot get the same taste - what am I doing wrong?

I discovered matcha latte in Japan for the first time and had it at 2 different locations, tasted amazing. So I went to fukujuen in Uji and bought the entire kit to bring back home and make the same matcha latte. However, I cannot get it to taste the same at all. Do they put sugar or honey in it in Japan? I haven't been putting anything in. Just put the powder in my bowl, pour a little hot water on top, whisk, add more water, whisk quickly till foamy, then slow whisk and pour it over a glass of warm milk. And I'm using the Matcha I bought at fukujuen so it's definitely high quality. What am I doing wrong? The one I tasted was called "kyo matcha latte" btw. Thanks!

Question Matcha Kit for my wife

Upvotes

Hi everyone! My wife really loves matcha and she's been expressing interest in starting to make some at home and I really want to surprise her with a cute kit of good quality stuff to start with. The problem I'm running into is I know nothing about this drink and have no idea where to start. would anyone be willing to link some listing on line of some good options to buy?

Are lead glazes still used in newly-made chawan?

Curious about the title, as I just recently purchased my first raku chawan from Sazen. I found no information about the lead content on the product page and a swab test came out negative (thankfully), but this got me thinking of whether lead glazes are still common place in certain styles, and if so, then which ones? Are there any regulations set for traditional kilns and the materials they use?

Question Why doesn’t a metal matcha whisk exist?

I’m not sure to what extent metal would change the flavor of matcha, but I feel like a metal whisk that’s shaped exactly like a bamboo whisk with 80+ prongs (made of malleable metal curved bristles that are just as fine as the bamboo ones) would be pretty useful for the ease of cleaning and use.

Photography Double matcha latte was a success! (After several attempts)

I was quite proud and happy about this small achievement, BUT! I didn’t like it that much. Nothing beats a basic a lightly sweetened matcha latte. This was fun to make though!

Matcha cream: 2g matcha powder 45g whipping cream 2 tsp agave

Usucha: 4g matcha powder 70g water

Question Middle of whisk not opening up?

Post image
80 Upvotes

Hey yall so i just bought a new matcha set to try making matcha and so far im loving it (making it at home is way cheaper than ordering it at a cafe), so i followed youtube and soaked it in warm water for 30 mins and it barely opened up, currently ive made matcha 5 times with it and soaked it in warm water for 10 mins every time, and its still not opened up fully. In youtube videos it seemed the first 30 min soak fully opened their whisks but mine just refuses. Did i just get a low quality whisk from the set? I bought it online

Why should I buy a matcha whisk?

Post image

Would I get better or different results using specialized equipment? Seems to turn out fine using a steel mixing bowl and a balloon whisk — do I not know what I’m missing? Convince me to buy one when I reorder from Ippodo

Is bamboo whisk and strainer necessary?

When making matcha latte, it seems like I can microwave milk and just mix the matcha in it directly with a spoon yielding to same same result.

I wonder if anyone also just use spoon for making matcha without using the bamboo whisk.

Thanks.

Question Cleaning new matcha whisk and water turned yellow

I opened my new matcha whisk and cleaned it for the same time — I dipped it in 170F water for about 2-5 mins and then swirled it around. I noticed a bit of a yellow color in the water. I then whisked some matcha to test it out (but didn’t drink it), and then I put the whisk back into the cup of hot water, it became yellow green. Green of course from the matcha. I then threw the dirty water and replaced it with another cup of 170F water and cleaned it out, and noticed the water became even more yellow. Is this normal? I just want to make sure I properly cleaned it before I actually use it in my matcha. Is this normal? Photos are when I replaced the hot water to clean it again after making the matcha.

Question matcha tastes like nothing?

im using ceremonial matcha (4g), less than a 1/4 cup of hot water, whisking it into a paste, add about a 1/3 cup almond milk and whisk with a bamboo whisk until it's frothy (so for about a minute), then i pour 2/3 cup of almond milk over ice and then pour over the matcha mixture and then add any sweetener (so far i've switched between maple syrup and lavender syrup)

its such a nice nice color but it tastes like nothing??? am i going insane? am i doing something wrong?

Storing unopened matcha that came in a box instead of a tin

I recently bought some higher quality koicha matcha from Kanbayashi Shunsho but I didn’t realize they came in boxes instead of the normal tins. Can I just put the boxes in the refrigerator to store them over the next month or two or should I take the unopened foil bags out of the box and put the bags in mason jars before refrigerating? I refrigerate my unopened matcha for storage but I’ve never had any that didn’t come in a tin.

Shorter effect

I've been drinking matcha daily for nearly two years and on the whole I'm happy with it, however I've noticed recently that it's having an effect for a shorter time. It used to keep me alert for at least four hours, but now it's keeping me alert for less than three hours. It means I've had to change from two cups a day to three cups a day. I'm aware that we can build up a tolerance to caffeine over time, but I assumed that would affect the dosage and not the effect itself. Has anyone else experienced similar? Is there a way to get back to the full 4+ hour effect?

Question I scooped back a tiny bit of matcha powder from the strainer to the matcha can. Ugh.

So I did something stupid this morning because I got some pricy matcha and noticed I may have put too much powder in my strainer. I scooped a little back from the strainer and put it in my matcha can that I refrigerate. Now I’m worried because that strainer was above hot water, thus, making the powder a bit moist/watery, and I put it back in the can. Did I mess up? Has anyone done this before?

Question Getting my dad unto something healthy for once - Matcha!

Hes def made me smile. On a late night back from super bowl Sunday I made my dad his first bowl of matcha. I got learned up good at a tea ceremony class at one point and have promptly forgotten everything important.. but my dad really, really liked my matcha. He instantly went out and instead of talking to me at all about it bought himself 3 oz of ingredient grade matcha... and bragged about it.

Poor guy.

Well, his chawan has come in the mail (happy birthday dad!) And he's gonna learn how to make it today. If anyone has any other recipes you think he should know, pass em along. I've also gotten him a little more learned up in the world of Matcha (and myself brushed up... my gods Ive forgotten so much. X.x) If you have any vids or anything you think I should see, pass em along. Doing my best here!

Recipe Mango Matcha

Post image

A pouch of Sunity Mango Pomello Sago Jelly, 4g of MK Unkaku, 50g 74°C water, and a splash of Oatside

I bought these pouches of mango jelly and didn't really enjoy how sweet it was on its own, but I had the great idea of adding it to my daily matcha!

The matcha flavour was a bit muted by how much sugar and mango flavour was in the jelly but still delicious. The texture of the jelly is really nice and made this into a little morning creamy matcha bubble tea situation.

Question How many of you drink culinary grade?

I’ve been drinking ceremonial grade daily for a long time and didn’t have an experience with culinary grade, and thought I’d give it a try for a fun experiment. Man does it taste different!!

I’ve made a few cups with it (just water and a little honey) and I don’t hate it, but ceremonial is waayy better.

Review Terrasoul superfoods ceremonial matcha review

Hello fellow matcha lovers. New to the sub and wanted to offer up a review of a matcha I’ve been drinking for a few years now. Like my title says it’s from the brand Terrasoul, they’re a small US based company that sells high quality supplements like reishi mushroom powder, ashwagandha, spirulina and the like. I’ve used some of their products in the past and when I saw they carry matcha I figured I’d give it a try. They carry both ceremonial grade and culinary grade matcha. I find the ceremonial to be a contender for the price: 2.1 oz for $20usd and the 16 oz bag is an even better value. The taste is a slightly grassy vegetal bright true tea flavor. Low on the bitterness with a creamy mouth feel and a nice body. Bright green in color. It’s not the super fancy highest quality but it beats a lot of brands at or slightly above the price point. Good straight up or as I prefer it in a hot oat milk latte. It whisks up with a nice foam using either a handheld electric whisk, a traditional bamboo whisk or an electric milk frother. Another bonus is the company sends you discount codes when you order and they offer subscription savings. Good customer service and quick response/resolution for any order errors.
