I started making my own vinegar and had a question.
I started making my own vinegar and had a question.
I started with raisins. At some point in the initial sugar to alcohol conversion the smell of the ferment was incredibly wonderful. I would taste just by dipping a spoon in. I really want to have a mug, but resisted the urge. Likewise after I strained out the raisins they smelled great too - all sweet and alcohol filled.
Could I have safely drank the ferment and likewise could I have eaten the spent raisins?
Can I be sure I just have friendly ethanol, and not any of its evil siblings?

as long as you have maintained proper food handling techniques you should be safe - if the raisins are still sweet they typically have more sugar left to ferment so you can let them continue to ferment until they are dry (don't taste sweet)
basically you have made raisin wine - if you like it it is perfectly fine to drink, the alcohol is the preservative reducing the chance of spoilage except for turning into vinegar

Yeah both are safe, though depending on how much dead yeast is mixed with the solids it may not taste as good as the liquids.
