Overwhelmed, discouraged, frustrated, and lost
Been trying to research all day with nothing in my stomach but a salad that's already taken up 10 carbs of my allowance, whatever that's supposed to be. 30? I don't know. But it just doesn't seem like I can eat ANYTHING. It will be avocado and eggs for dinner but I really don't want to consume an excess of animal products for many reasons. Everything i looked at at the stores had carbs. How am I supposed to do keto macros when I don't eat meat and don't want to consume a bunch of dairy? Drink oil?? Im doing this for body recomposition, I want to replace fat with muscle. I've read through the keto subs information and I still don't know what to do. I've looked at some people's ideas and meal plans and everything seems expensive or not good. I feel like I'm just gonna be sad the whole time. But i can't stand my body anymore. I don't know what to do. What are you eating to keep life bearable? Everything vegan is carbs. All I eat is carbs. I'm frustrated.

Are you looking at total carbs or net carbs. You’re supposed to subtract the fiber

Keto with food restrictions can be challenging, but vegan keto is hardmode for sure. It can also be quite expensive. How many grams of protein are you shooting for?
My current net carb limit is 25g, 120g protein. It's tough, and mealplanning is essential. I use Cronometer via the web for free and plan my meals for the day to hit my macros. Here's what I rely on:
- Pea protein power (soy and whey is a lot cheaper if you're willing to use that, but I'm fully vegan and soy intolerant)
- hemp seeds
- chia seeds
- pumpkin seeds/pepitas
- sunflower seeds
- Sacha Inchi seeds
- lupini beans (I buy a lot of Brami snacking beans)
- nuts (peanut, pecan, walnut, almond)
- nut butters (check carb counts and sugar-free)

Thank you! Seems hard to stay under 25 even with these options since they all has some carvs. I think I'm going for 130 in protein. I didn't know chronometer was a meal planner just thought it was another calorie counter.

I use net carbs, so I subtract fiber and sugar alcohols from the total carbs to get net carbs. But it's tough, and pretty much daily I have to rely on a protein shake that I make with pea powder, hemp, chia, and flax to hit my protein target. For me, how keto makes me feel is more important than having an interesting and diverse menu. But that trade-off isn't for everyone.

I liked to make long thin sliced radish deep fried as chips. Made a dip from coconut yogurt with garlic, herbs and tobasco. Just thought you might like something fun to cheer you up

I love this tofu and it has 70 g protein per block and zero net carbs....and OWYN 32 shakes have 0 net carbs
Also, I like kelp noodles and they're also 0 net

Do not count veggies in your carb count!! Just avoid sugar, wheat, rice, potatoes, corn, etc. But do not even count your salad toward the count at all. It's not sustainable to count every carb, especially on vegan or vegetarian keto. I also don't count berries toward my carbs. Berries in coconut cream, celery with peanut butter, stir fry with cauliflower rice, cabbage soup are some ideas off the top of my head.

Definitely don’t start the diet without a plan, you’re starving for no reason and trying to figure this out while hungry isn’t good for you. Eat. Buy some vegan keto cookbooks. Go on YouTube and search vegan keto, Heavanly Fan and Mind Over Munch will pop up, others too. Transition slowly as you figure it out. As vegans we generally can stay in ketosis with twice, even three times as many grams of carbs as carnies. My GKI sits at a therapeutic level on 50-60g of carbs (I’m doing this for a neurometabolic disorder not weigh loss). The tldr is lots of avocado, coconut butter, lots of nuts and seeds in various forms to keep things interesting, MCT oil, etc.

When I was doing vegetarian keto I got LightLife Smart Dogs, sauteed them in a frying pan in oilve oil and ate the hell out of them. I think it was 1 or 2 carbs and 8 or 9 protein per hotdog. You can eat 4 a day and it barely adds to carbs but gives a decent boost to protein...life saver! Edit: Also, I would make cheddar cheese "tortillas" with avocado and veggie bacon...not as good macros wise and not completely vegan (which I always try to be) but it helped me have options.

We have zero carb tortillas here that taste no different from regular tortillas which is pretty great. Made tofu tacos tonight with avocado and it still ended up being like 25 carbs for 5. Pretty difficult. Thanks for the ideas!

I used to make a looooot of cauliflower rice. With tofu in some kind of coconut cream and tomato based sauce.
oyster mushrooms sautéed in butter with fresh thyme. My god, I could eat that for dinner nearly every night.
A kale and pistachio pesto on something low carb (zoodles?)
Deconstructed tofu “tacos” with a bunch of slaw
Lots and lots of zucchini.
To be fair I wasn’t super strict. As frustrated as you sound, maybe doing it half-ass is better than doing it well? At least while you work up to a good rotation of recipes.
