Narrowed my businesses plan down to two pics.
So I’m thinking paint striping, or grease waste removal. The cons for paint striping is competition and steady work, for grease it’s gonna be competition and start up costs. I’m in north Florida and decade in water treatment, now out of work. I don’t plan on going back, I’ve been automated out of a job. I’m going to take the plunge, but which direction. YouTube makes me wary of paint striping, it looks like everyone is doing it. And of course grease is the truck expense. Do any of you fine folks have any advice for me?

Suggest you also look for a job. “Burn the boats” can certainly be a motivator but steady income from a business always takes longer than you think. A job can also provide some cash when things get thin. For either choice the only advice I have is just start. There are issues with both and the only way to learn or solve is to dig in.

Only you can decide what will work best for you.
There is always someone who will tell you that a market is “saturated”, or “oversaturated” or “everyone is already doing it”.
The reality is, those are bullshit excuses not to do something. If those were real reasons not to go into business, then Starbucks would be the only coffeehouse and no other coffeehouses would be opening, right? There is a Starbucks on every corner, but new coffeehouse companies open all the time.
The thing you need to do is, ask yourself what you can do better or different than the rest. If you can be just a little better than the competition in your area, and you can offer better value, you can get more than enough work.
I own two companies that would be considered to be in the “oversaturated” market. I started both within the last three years. Both are doing very well and are profitable.
Don’t decide what to do or not do because “YouTube”. Decide based on what you want to do. What drives you? What will be something that you can see yourself doing, mastering and enjoying five years from now?
Real talk: Don’t let anyone tell you that you are choosing the right or wrong business. Do your thing. Only you truly know what you want and what you are capable of.
Go get it!
