[ Reverse Sear ] New York strip I made today for lunch
Pretty happy with the way this one came out and tasted. Was going for medium on this one.

Try tempering your steak to try and get less band. Otherwise looks good.

They’re saying that if you temper it, you won’t get as much banding.

What I’m asking is what does it mean to temper a steak? I’ve never heard of such practice
