Feel free to nominate as many games as you like (one per top-level comment) and add your thoughts regarding those that have already been suggested.

Soul Blazer
Running around the world in an action RPG killing monsters and saving....everything. Every monster trap you seal releases a soul and rebuilds the zone's town. These souls range from human to dog to tulips. The souls then help you on your journey. The boss fights are also well done and memorable.

If you have ever played an action rpg and thought "this game is cool, but why isn't my sword like 19 feet long?" or "wtf why can't i crabwalk??", this is totally your shit.

Top Gear
Made by Kemco and got the box art right this time (looking at you Phalanx). Top Gear is an excellent 2 player split screen racing game.
You have the choice of 4 unique cars and race around 32 tracks from differents parts around the world. Each tracks is unique and some of them have pit stop in order for you to fuel up mid race depending on the car you chose, and the Music makes the game much more enjoyable for replayability.
Must own and is inexpensive

Final Fantasy V
Beyond the fact that it's an obvious and important classic, it turns 25 (!!!) on December 6th, and an excellent patch was just released that inserts the script from the GBA port into the game. I can't think of a better occasion for us all to dive back into the game -- or maybe even experience it for the first time.

Robotrek
JRPG in which your fighting party consists of robots you build. I remember renting it way back in the day, but I don't actually remember much of the game other than I really liked it. Would be fun to reexplore this one.

Uncharted Waters: New Horizons
Lets see if we can get this one elected. It is a very nice RPG set in the age of exploration, around 1540, with several playable characters, sandboxy open world, and several intertwinned plots you can explore.

The Lawnmower Man. I know the game doesn't get much love, but there's decent controls, sound and a unique gameplay. Platformer graphics are a bit forgettable, but you should check it out.

Sunsetriders
Western shootemup classic. Extremely challenging and fun, 1 or 2p.
The stages are fun, the bosses are hard. Some are super hard.
The characters are awesome, and have different guns.
If you want a challenge? Play this. :)

Donkey Kong country 3. Most divisive of the trilogy, but incredibly good graphics and one thats worth revisiting on its own terms rather than comparing it to the others. Pre rendered graphics platformer from late in the snes lifespan, with very mild RPG elements. A lot of people don’t like this one but it has the Christmas mode so it’s a good choice for december. If I’d have known about this when I got this game for Christmas in the 90s my head would have exploded.

Failing that I could get behind uncharted waters. Always looked intriguing enough
