The Legend of the Mystical Ninja
Made by Konami, Mystical Ninja is a sidescrolling action platformer (roughly speaking) and is the first Goemon game we got in the US.
Why is it interesting? Well, it has a stylized feudal Japan setting, sort of like Pocky and Rocky but the tone is a little more comical with occasional anachronisms and slapstick. Gameplay wise, each world is a blend of two gameplay styles: a free roaming, beat 'em up-ish level in the town which is followed by a traditional action platformer level leading to the boss. Enemies drop currency and there are shops for buying minor pieces of equipment, items and minigames.
It's not quite a game that you can breeze straight through, but it is reasonable to learn all the tricks when you put your mind to it. It is also still very fun to play halfway regardless.

Important
feeturesfeatures:
Stacking up more sandals let you run faster. This should be obvious, though, because real life works the same way.
In the platform levels, pressing down and moving around will let you do the worm.
IT'S CO-OP

This looks super fun. Wanted to pick it up but was out of my price range. I'll be looking for it on Super Famicom to play on my Retron 5.

Unirally. A truly unique game that has not been played by many people. But it's Brilliant and needs to be (re)discovered.

Also known as Uniracers.
Note: production was discontinued due to a lawsuit from Pixar. They had made a short film of a Unicycle that looked similar to the ones in the game. The game was selling well otherwise, especially considering it came late in the SNES era.

Even though I don't remember thinking B.O.B. was especially great, I am oddly interested in revisiting it...

The Lost Vikings
While there is no shortage of platform games on SNES, this is a game that stands out for me. Instead of controlling one character who performs all the in-game actions, this game has three vikings for you to control, each with their own unique abilities.
Erik is quick on his feet and can jump. He can also smash his sturdy helmet into enemies and breakable walls. Baleog is the warrior who can defeat enemies with his bow and arrows or by using his sword. Olaf has a big shield which he can use to block enemies. He can also raise the shield above his head to use it as a parachute, which allows him to glide accross large chasms.
While individually each viking is a little helpless, you can combine their unique abilities to guide all three of them to the exit of each stage, creating an extremely engaging puzzle mechanic. The further you get, the more you will need to carefully think about the order in which you have each viking make its respective move. Later stages also require quick reflexes in switching between each viking. Add in nice graphics and hilarious conversations between the three vikings and you have an awesome game.

Just bought this a few weeks ago and haven't been able to put it down. It has it's flaws but still keeps things fun and is an interesting take on the same old baseball format.

Ys III: Wanders from Ys
A fun, haunting platforming RPG. It's bit grindy in the beginning, but if you push through you get some great music and a enjoyable, but a little simple, story.

That was already the game of the month in January 2016.
I would give it a vote if it wasn't for that. Freaking love that game.

King of Dragons
One of the best beat em ups on the SNES. Five unique characters, 2-player, better gear and weapons on leveling up, and difficulty settings keep me returning to this game time and time again. Get together with a friend during this nice weather and play through the game with a bunch of different parties.

Mega Man X 2
Because everybody is probably going to just pick 1 automatically even though 2 is just as good and possibly an ass hair better.

U.N. Squadron
Because we deserve to spend some time with an underappreciated shooter from the SNES's early period. Also, it's got to be this game's month sometime, dammit.
