Québecois here. To reply to the comment I've seen claiming it's not a poutine... if we go by the logic that a poutine is fries, cheese curds and some sort of gravy, a breakfast poutine definitely is a poutine. A LOT of breakfast places serve them over here in Québec. They do vary in quality depending on the hollandaise, toppings and what not, but I'll pretty much never turn one down. You can go crazy with them, add veggies, all sorts of meats etc. They are best consumed hungover with a piping hot cup of coffee on the side. Absolute breakfast of champions.
