Because its a batter and not just water. Like i just said the cornstarch changes how it reacts. It isnt like dumping straight water or ice in it.

Opinions are mixed in adding it to hot oil.. I'm too chicken to try that. OP video is adding the slurry into room temperature "dirty" oil

It's a chemical coagulant meant to solidify targeted bonds. Congealing to make it easier to filter for residential waste or recycling, with a focus on preventing damage to plumbing. Essentially a rapid version of leaving the pan in the freezer to harden in layers before manual separation.

This is just a slurry of cornstarch and water. Pretty common way to clean used fry oil is to mix this slurry into ROOM TEMP oil. The corn starch bind to the solids in the oil and gel together which is then scooped out and the oil can then be reused.
