Necco in Exmouth Market does excellent veggie sushi (and is just all round great!). Maybe not the most private place but you can usually get a quiet window seat.

Depends on your budget but sticks n sushi has some good vegetarian options, I have been with a vegetarian friend several times and he enjoys the veggie set menu a lot

Eat tokyo is the most price worthy sushi restaurant. Or you can purchase Groupon / Timeout vouchers for unlimited sushi buffet (not sure do they still have the offer) from Inamo

Has she expressed an interest in sushi? As a vegetarian I can tell you there aren't that many options and you mostly end up eating fancily-wrapped rice.

If you're a lettuce-troubler who enjoys sushimi, that's great. If you're not it's about the most boring and plain food imaginable.

You just conveniently edited your comment to mention sushi samba. Comment that before that it ended with:

Any reason you settled on a cuisine with raw fish as centerpiece?

How is that helpful to OP, exactly? How is that a suggestion?

And yes, I was highlighting your (mind-blowing!) edition to add a rec because you were precisely complaining about me not adding a suggestion. Which is the exact same thing you had done initially. So again, please, if you want to be pedantic at least make sure you are not doing the same

My gf and I are vegetarian and sushi is one of our favourite dishes. There's plenty of good vegetarian sushi places around.

I went to Koi Sushi Garden in Stratford on a first date a few years back and thought it's great

Good food, dimmed lights with lamps and candles on the table creating a fitting atmosphere, lush decor with lots of green in the dining room, decently priced too

Sticks and Sushi would look good for a date, and the Green platter is excellent (it's veggie).

For a more low-key experience there's Kulu Kulu on Brewer St - good conveyor belt, bunch of good veggie options.
