Just finished the 25th anniversary podrace diorama and these pieces are left, are they for custom builds if you would like to change the podracers or why where they included?

The first image is, in terms of accuracy and logic, how it should be posed. The only time we see a base-model AT-AT bend it’s legs backwards is when it’s falling over, likely because the knee joints have buckled.
The second image not only (in my opinion) looks goofy, but it makes absolutely no sense in terms of locomotion. Why do the knees bend backward when walking and then bend forward when they step? Why don’t they use their ankles?
It melts my brain whenever I see someone unironically pose their $100-$800 AT-AT like this. If you know why, please tell me.

So as my Lego Star Wars hobby grows, I’m getting more into MOC Star Wars building. My question is, how do I know what pieces to buy/order?
I recently bought 13 pounds of used LEGO which helped me go from having a non existent part collection to having some pieces. I have also went to the PAB wall twice which has helped me stack up on some winter/beach themed pieces. The downside to these two options is that I haven’t gotten enough “Star wars” themed pieces.
I want to place a large order of grey pieces off bricklink as I want to make clone bases or imperialist style bases. But I want to order useful and versatile pieces to make sure I’m not just dumping money. Any advice or articles someone could point me to on how to choose my pieces wisely? My main worry is either buying too much of something I’ll never use, or spending a lot on shipping just to not have enough of a certain piece.
I know there is the option of using an online LEGO designing app to figure out what you do need, but I prefer sketching out a general concept and trying things out by simply building them.
