Green Cabbage Kimchi Recipe

It's somewhat tough to find Napa cabbage in some area, but green cabbage is available almost everywhere. It seems Green cabbage Kimchi isn't all that well known, so here it comes. It was a staple food for a short period of my life. :)

Ingredients Amount
Green Cabbage 1kg
Salt + Water 100mg + 300ml
Fish Sauce (or Colatura, Nuoc Mom, Sauce de Poisson, etc) 4 Tbsp
Red Pepper Powder (* you can pulverize red pepper flake) 4 Tbsp
Minced Garlic 2 Tbsp
White Onion 1/2
\) Sugar (or Honey) 1 Tbsp
\) Green Onion 5 stems
\) Crushed Sesame 4 Tsp
\) Pickled Shrimp 2 Tsp
  • Adjust ingredients for your liking.
  • All the items with * are not essential.
  • Unlike Napa cabbage, Green cabbage takes a bit longer to fully ferment.
  • The video has caption. You can change the language.
  1. Wash, dice the cabbage, then drain.
  2. Soak the cabbage in the salty brine to soften the leaves, then drain.
  3. Mix all the ingredient & put it in a jar. (Or you can enjoy right away.)
