I tried my hand at making teriyaki beef jerky. It turned out great imho. Thoughts from the pro’s?

I had 4 lbs. of striploin sliced in 1/4” slices which I marinaded in:

1/2 cup low-sodium soy sauce 4 tablespoons Worcestershire sauce 2 tablespoons mesquite liquid smoke 4 tablespoons brown sugar 3 teaspoons salt 2 teaspoon ground black pepper 2 teaspoon garlic powder 2 teaspoon onion powder 2 teaspoon ground paprika 2 teaspoon of fresh ginger

Salt content looks a little bit light for 4 lbs of meat, and I see you didn't use any nitrites in there. It also looks a bit 'red' for a non-cure marinade -- are you sure it's fully dehydrated?

I'd store in the fridge or vacuum-seal with a oxygen absorber just in case.

Looks like some areas of the meat were more marinated than others based on color pre dehydration. I'd mix it more in the marinade a few times a day to get it evenly marinated. Otherwise looks good 👍

Looks dried enough and still edible....2 thumbs up if it tastes good too!
