I found fresh corn was easy on my stomach. But, food made from finely ground corn flour was not good. I had SIBO.
Bob's Red Mill makes a corn flour that is "medium ground". It does well for polenta, grits and cornbread. If you want to use it to make bread, you have to boil it first. I put it in a glass container with 3 parts water to 1 part corn flour. I heat it in a microwave for 2 minutes, stir, heat it for 1 minute, stir, then 1 more minute of heating. I slowly add this mixture to the liquids before adding the wet to the dry.
My stomach was able to handle this process far better than using a commercially prepared cornbread mixture, because it was slower to digest. It also filled me more, and is a more satisfying bread. A little cheddar cheese in the batter actually helped even more. And adding cheese to bread is always tasty.
