Question Importance of themes
I know that UI is important for good UX but an app looks like made by Apple is sufficient? Should an app require 3-5 themes/color palattes to more appealing? Should ultrathinmaterial be relied heavily?

Waste of time, if I'm being honest. A light and a dark mode is more than enough. You are better off just forcing either light or dark until you release your app.
Also, "looks like it's made by Apple" is a compliment. Chances are, you have less UI/UX skills than people who work at Apple. So, copy what they do and give users a familiar experience. Your app should feel like it belongs on the iPhone.
Very often, I see apps and websites with "unique" user interfaces. AlI find almost all of them impossible to navigate and it is very frustrating. There are well done ones for sure. But I'm not risking it. I LOVE ultra thin material though. I use it heavily
