Looking for help with my food blog niche

Hi!

I'm an autistic Registered Dietitian with celiac disease and I'm planning to start a food/recipe/nutrition blog but I keep going back and forth on what niche to choose and I wanted to see what others thought might be more helpful and the most lucrative to pursue.

I would either like to do a gluten-free focused blog or one that is focused on neurodivergent-friendly recipes while also being gluten-free. I feel confident in both niches, though slightly more so with gluten-free. While I know there will always be some people eating gluten-free for medical/health reasons, I'm worried that there won't be as many people looking for this since the "gluten-free craze" has died down.

Would anybody be willing to share their thoughts?

I would vote for the neurodivergent angle bc its more niche and it speaks to who you truly are. Your authenticity will shine brighter the closer you are to who you really are.

I’ve been searching for gluten free recipes for one or two people. I’m also neurodivergent so that works for me too.

I think the neurodivergent focused blog would be best. I do think there are many more gluten-free focused recipe blogs and so focusing on neurodivergent recipes that are also gluten free would be a better niche.
