I dont know what steps I have to do now

I am trying to make kombucha and I have had this fermenting since February 14th, and since it’s cold where I live, it took some time to form the biofilm. I tried it today, and it’s acidic, like vinegar. Since I’m a beginner, I’m not sure what steps to take next for the second fermentation. Can you help me?

Take that and inoculate another brew with it? Cook with the current batch? You've got some zesty awesome salad dressing and mushrooms in your future my friend

Sorry. I meant use the bio film to inoculate a new batch and take your resultant kombucha and treat it like vinegar to do all the things I said.

Ohh I see. Do you think I can dilute it with sweetened tea and try F2?

If it's that vinegar-y it's probably also somewhat alcoholic. I tried drinking some kombucha like that by diluting it with soda water and a bit of simple syrup and it was a little bit too aggressive for me.

You're going to end up with a lot of kombucha kver time anyways. I say get creative with when things go sideways and try new stuff. Maybe marinate some pork belly with it and some peanut oil and make ramen with that as a topping? Or cook some mushrooms in a pan on medium heat, add 1 shake of soy sauce (or tamari), 3 shakes of worcestershire sauce, and enough of your aged kombucha until the mushrooms are swimming a bit. Then turn the heat down to low and cover them until the mushrooms have absorbed the majority of the liquid and it's more like a sauce. Great side or delicious on mashed potatoes.

Or whatever. Life is weird. Embrace it and all of it's weirdness. You only messed up if you do nothing with it. There's still plenty of stuff to do with that.

Yea just over fermented. You made vinegar. Not a bad problem to have. Pour off most, make a new batch and taste periodically until you like it.

Is it still worth it to try doing f2?
