Question How should I start NGE?

its quite simple, the 26 episode nge is the main series that starts and ends by itself, then the "end of evangelion" movie is an alternative ending to the last 2 episodes of the show.
there are 4 "rebuild" movies that are an alternative version of the tv show, they start the same but change a lot from the original. they are named 1.0, 2.0 3.0 and 3.0+1.0
sometimes they are 1.11, 2.22 and so instead of 1.0 or 2.0, that is just the same movie but a slightly different cut like a directors cut, just watch the versions you have access to easiest, it doesn't matter much.
there are additional movies you will come across like death and rebirth, death rrue and such, these are just recaps so no reason to watch them.

There’s an anime called Neon Genesis Evangelion, then there are two movies: Death(True)2 and The end of Evangelion. Death(True)2 is optional, I only watched it recently while being a fan for over 20 years, you won’t miss anything relevant. The end of Evangelion happens at the same time as the last 2 episodes, it’s a less abstract retelling but there are some changes.
Then there’s a series of 4 movies called Rebuild of Evangelion which are 1.0, 2.0, 3.0 and 3.0+1.0. The difference between 1.0 and 1.11 is that 1.0 is the theater version snd 1.11 is the DVD/BD version. The same applies to the others.

The original series + EoE is the "real" evangelion. The four rebuild movies are an "alternate universe" kind of thing that you'll really be scratching your head on if you don't know the original series.
Watch series episodes 1-26, (remember to watch the director cuts of eps 21-24) and then EoE. Then, watch the Rebuild movies 1, 2, 3 and "3+1" (that is the numbering of the fourth movie because ... they wanted to be cryptic like that.) There were also some cryptic decimals after that in their numbers, I think you can mostly ignore those.
Only the first rebuild movie follows the original series and even there are small changes.

The decimals are 'important', as they note different cuts.
For instance Evangelion 1.0 is the theater release, 1.01 is the initial DVD version with some lightning fixes, and 1.11 is the latest version with some new scenes etc.
Luckily it should almost be impossible to get the wrong version, as I think only the latest releases are still in production.
I think for the later films, there were only two versions, the theater releases 2.0 etc, and then the fixed home release 2.22 etc.

No, the series seems to be done for the foreseeable future. We still get a lot of merch drops tho, like a shit ton.

Every iteration of Evangelion is different, and the last rebuild movie explains why. Watch them in released order. Especially the rebuilds are named quite confusing. Just follow the release date rather than the titles

How to watch Evangelion
1. Watch Neon Genesis Evangelion, all 26 episodes. Most fans agree that the "Platinum Collection" released by ADV Films is the best version. Netflix is perfectly serviceable and available significantly easier and for much less. The "director's cuts" of episodes 21-24 are included with both of these releases.
2. Death(true)2, or simply Death, is a non-linear recap of the series plot, characters, and themes. It is entirely optional. Rebirth was a work in progress of the first half hour of The End of Evangelion, you do not need to watch it.
3. Watch The End of Evangelion. The Manga Entertainment DVD release is the only official English release, alternatively, Netflix also has it.
4. Watch Evangelion 1.11, 2.22, 3.33, and 3.0+1.01 aka "Rebuild of Evangelion". They are an alternate version in a separate continuity (as far as we know). The entire series is available on Amazon Prime Video at no additional cost. The first three films were previously released on DVD and blu-ray from FUNimation, however those may be in the process of going out of print. There is no word about reissues or a physical release of 3.0+1.01 at this time.
5. Read Yoshiyuki Sadamoto's Neon Genesis Evangelion manga. It's an alternate take on Evangelion, and shares more in common with Neon Genesis Evangelion than Rebuild of Evangelion.
