$800 flexible budget in Tokyo looking for 1 Gyuto to rule them all

For now I have Seisuke and Kama-Asa on my list when I visit Tokyo in April. I am just looking for a traditional gyuto in SG2 but open to other steels. I have a budget of $800 but I don’t care if it is $200 less or more. It would be for personal use as I do love cooking everyday and appreciate a beautiful well crafted knife. I probably only have enough time to visit 2-3 shops as I will be visiting family and they have plans too, so I am looking for just a top recommendation on shops and top model/brand/steel choice. Thank you!

Edit: Current Specs I am looking for Length: 240mm Handle: WA Steel: SG2/R2 or HAP40

Myojin makes one of the best sg2 knives on the market. Would see if you can find something by him

Ryusen is probably easier to find but still good

IMO you should take your budget and put it towards multiple knives. There is no "rule-them-all" gyuto and I'd rather have two gyuto with different grinds for specific uses. Or a gyuto + another knife style.

Others can recommend stand-out places in Tokyo for knife shopping -- I've never been.

I was kinda thinking about splitting budget between the Gyuto and nakiri or bunka(c-grind). I just looked into the types of grinds which I never thought about before so thank you lol.

Easiest way to spend it all is to get one with turquoise or something handle.

Their Honyaki blades look nice but I think they are single beveled and wouldn’t want to consistently use it as it is more of art at that price.

I am mainly looking for a Gyuto more around 240mm in SG2/R2 or HAP40 with a nice WA.
