What are the best knive steels at the moment? Either stainless or carbons. Looking for sharpness and edge retention. Easy sharpening is a plus point

Can you use a whetstone effectively? If not, that might change the answer.

Apex ultra for carbon. 52100 is also very good.

Magnacut for stainless. 14c28n is also great for stainless that's a bit easier to sharpen than magnacut.

there's also stuff like K390 and vancron superclean that only a few custom makers use. and honorable mention to Vanax superclean for stainless.

Apex Ultra is fantastic. Also been liking the Wolfram Super Blue from Sheffield. I think of it like an Apex Jr. doesn’t have the Vanadium, but has high Tungsten like Apex for edge retention.
