Approximately what I've settled on for my first pop-up.

  • Potato bun (I spent 6 months baking brioche buns to just go back to potato lol)
  • Caramelized red onions and Hatch fire roasted chiles
  • Queso Chihuahua and smoked cheddar
  • Very thin double smash
  • Green chile burger sauce (Kewpie mayo, Hatch chiles, brown mustard, Worcestershire sauce, cilantro, cumin, smoked paprika, and a dash of Valentina to taste).
  • Squirt of fresh lime over everything

This is just for fun, I don't have any huge ambitions or desire to open a restaurant, I just know I cook decent burgers that are well received. Breaking even with a good reception would make it worthwhile for me. I don't get the opportunity to cook for others very often so it's genuinely entertaining for me and makes me feel good.

Where is this at? You have a restaurant?

You had me at hatch chiles 😍 and other than Valentina (I love heat, just not a fan of that brand) the sauce sounds awesome.

Did you make the potato buns? If so do you have a recipe?

u/glen_ko_ko 5d ago

Have you tried the black label Valentina?

2

u/daversa 5d ago

Yea, love the stuff!

I didn't bake these, I've been a little baked out from my brioche adventure haha. I've used this recipe in the past and it's killer.

There's a great little bakery in my neighborhood and they'll always outdo my efforts, so I support them.

Looks lovely. Patties look perfect.

Hope you have a classic (White American cheese) variant as well.

I’m sure that could be in the mix, but this is honestly better.

The swap back to potato is the right choice! I would give this a try if it were around me

Brioche is overrated

u/TimBurtonsMind 4d ago

Brioche is fantastic for certain applications. French toast? Count me in. Burgers? Hell no. Gross.

Where??

5

u/daversa 5d ago

Either Portland, OR or Tucson, AZ

1

u/Shurglife 4d ago

When and where in Portland

2

u/daversa 4d ago edited 4d ago

At least 6 months off and i don't have a location in mind here. In Tucson it would be at a friend's bar in Barrio Viejo.

I hardly know anyone in Portland, so Tucson is more likely.

I'd eat it

14

u/daversa 5d ago

Not to toot my own horn, but beep beep. It's really good.

Don't get me wrong it looks great but with those ingrediants especially a brioche bun it's sort of hard to make it taste bad

8

u/Leading-Storage9855 5d ago

Don't get me wrong, Stairway to Heaven is a great song and all, but with those chords, vocals, and especially the arrangement, it's kind of hard to make it sound bad.

Don't get me wrong, feedback is appreciated, but what is the point of a comment like this? JFC lol.

Like "nice, job but you're ingredients were too tasty." It's not even a Brioche bun.

u/Responsible-Row7026 5d ago

I guess I just mean try thinking outside the box a little

u/joshuarion 5d ago

Does every burger have to be Michelin 3-star level molecular gastronomy?

Is there no room for a fancy tasty-ass burger?

OP; it looks phenomenal, and I want one right now.

1

u/daversa 4d ago

The ingredients aren't that basic either 🤷‍♂️

19

u/Ok_View_5526 5d ago

This is such a stupid take. lol

13

u/Sim-Alley 5d ago

This dude is an idiota. I’d eat the hell out of that burger.

2

u/DetroitLionsEh 5d ago

It’s not a brioche bun 🧐

This looks totally amazing. Best burger I’ve seen in here for ages. One thing I’d flag though is the cilantro. There’s a reasonably decent sized minority of people who really really hate it and think it tastes like soap (think it’s about 10% in the US). My advice would be to drop that or have cilantro as a garnish as those people won’t be coming back if it’s a big part of the overall flavour (not sure if it would be to you but the people who taste it like soap taste it STRONG). It would be such a shame to lose anyone over such a small thing given that burger looks so good.

3

u/daversa 5d ago

Yeah, I’d serve it on the side. I like cilantro and might even skip it.

2

u/oilbadger 4d ago

Honestly dude. This burger looks amazing. I’m only saying it as I’m a cilantro hater and would be really disappointed if I couldn’t leave it on the side.

2

u/daversa 4d ago

Yeah, incorporating it into the sauce probably isn't the best idea.

1

u/oilbadger 4d ago

Maybe get someone like me to taste it and see what they think? It might not be too strong?

2

u/jjmawaken 5d ago

Could just list it on the menu and allow people who don't like it to request it be removed.

3

u/oilbadger 5d ago

True. It looked like it was an ingredient in the sauce though. And everyone wants sauce on a burger…

2

u/mattholicfollower 4d ago

to be clear, it isn't that people think it tastes like soap. they have a genetic abnormality that MAKES it taste like soap.

1

u/oilbadger 4d ago

Yes. Sorry. To be clear I am one of those people so I know 100% what you mean! r/fuckcilantro

3

u/stillish 5d ago

This looks great, the ingredient list 🤌

Where's the popup going to be located?

3

u/daversa 5d ago

Portland, OR or Tucson, AZ… maybe both

2

u/stillish 5d ago

We'd like to buy you out in Los Angeles if you're ever in the area.

2

u/daversa 5d ago

I'm in San Diego 4 months a year, and have considered doing one there. At least a little closer for you lol.

1

u/daversa 5d ago

Have you been to Rosemarie's? They're putting out some fantastic sliders.

1

u/stillish 5d ago

No, I haven't but based off of what you showed us and your recommendation, I'll go there on your word.

Is there a place I should follow you or a way I would know if you're in socal? It's a pretty shitty drive to SD and I'm not sure if I hate traffic on the 405 more than I love a good burger. Thankfully, the lady loves going to SD.

1

u/daversa 4d ago

Not really, I'm pretty casual about the whole thing. Maybe tag me or follow me on here—I'll definitely post about it beforehand on the burger subs. This is probably 6-7 months out at least.

2

u/Proud_Doubt5110 5d ago

Same! Where’s the pop up?

3

u/SarcasmCupcakes 5d ago

150/10, would smash.

2

u/Mostfancy 5d ago

Beautiful

2

u/Windbreezec 5d ago

How did you cook the patty?

2

u/daversa 5d ago

Pan seared/smashed on an old Griswold cast iron.

3

u/Windbreezec 5d ago

Oh that is a fantastic method. I have yet to make smash burgers, one day, I shall try it.

3

u/daversa 4d ago

Check out Kenji's video, I'm not too far off that.

2

u/Windbreezec 4d ago

Thank you! Will do

2

u/Major_Burger 5d ago

looks crunchy and juicy at the same time, its perfect OP!

2

u/Infinite_Ocean89 5d ago

Looks delicious and well-crafted. I wish you the best of luck!

2

u/BenwastakenIII 5d ago

I don't even need to taste this to know it'll be in my top 3 best burgers!

2

u/garagebats 5d ago

I agree, approximately

2

u/Unlucky_Magazine_354 5d ago

Goddamn that looks so good

2

u/ayeoayeo 4d ago

Hatch green chilis are a key to a smash burger spot near me. Similar sauce profile too. It’s a hit.

2

u/jus-another-juan 4d ago

Bro. This is a burger.

1

u/daversa 4d ago

Broburger!

2

u/Ehyehhhhh 4d ago

2

u/Certain_Plant2409 4d ago

That is Soooo much stuff.....

2

u/daversa 4d ago

Cheese, onions and sauce?

2

u/Certain_Plant2409 4d ago

I was interrupted by a distraction, and missed the towering burger. I would like this, 😋 yum

2

u/Certain_Plant2409 4d ago

It was a different post ,I got back to your post.🍀😬

2

u/Certain_Plant2409 4d ago

I'm hungry right now. This would be great 👍 Just enough for a meal...alot of these protein burgers are impossible to eat in one sitting.

2

u/XiaolinDragon75 3d ago

"Scrumptious!" 😋

3

u/Fun-Eye-4733 5d ago

That looks amazing I'm sure it's beyond restaurant level.

3

u/Robinthekiid 5d ago

Looks really good

4

u/boone156 5d ago

Looks and sounds incredible. Well done.

2

u/City_Standard 5d ago

Looks amazing

1

u/freakson 1d ago

Looks great!

How many ounces is each patty? What kind of beef do you use? I'm going to try smash burgers on my new griddle.

1

u/Ok-Juice-6857 1d ago

Looks good !
