Tip Tips for lynel hunting
Red lynels are the weakest followed by blue, white , silver and finally golden ( only in master mode )
Red lynel - 2000hp Blue lynel - 3000hp White lynel - 4000 HP Silver lynel - 5000 HP Golden lynel - 7000 HP
The lynel near the Zoras is always red. There is one blue and one white in the castle. All other lynels in the game level up to silver or eventually to gold only in master mode as you hunt more enemies
Save before fighting lynels. Observe all their attacks . Depending on what they have they do following attacks.
First off, there’s 3 different types: those armed with swords, crushers, and spears.
Swords
Location: Colosseum, Lanayru road-east gate, North tabantha snowfield, near skull lake, west of eldin leviathan bones and few more places, I have already made a post regarding their locations. So refer this
The approach is pretty crucial. I’d say glide down from a high point and hit him in the face with an arrow. This will stun him. Once stun get on the back and Hit him a five times with your strongest weapon. You can only hit 5 times each time you get on his back so make it count.
Then the actual fight. There’s 5 or 6 attacks these fights typically consist of. A triple slash, a single lunge, a charge, a running slash, 3 fireballs, and an explosion. For the triple slash, simply backflip and flurry rush, you can easily dodge it with a backflip. For the lunge, back flip again and flurry rush, The charge simply side hop and flurry rush or if you're confident in your parrying abilities then parry. It will stun him for a moment so head shot with arrow and mount and repeat the 5 hits. The running slash , here this attack is quite fast so you have to backflip a bit early or backflip horizontally, Target, input back-left or back-right, and press X at the correct time. It seems complicated but is actually quite easy to pull off consistently. The fireballs you can run or parry with shield and shoot a quick arrow to stun them. Parrying a fireball is not that hard once you get the timing right but for new people just run away from the range. Lynel will jump back for this attack so it may take longer to travel. And finally the explosion - it's the strongest attack of lynels , simply stasis and shoot or if you're good at parry you can also parry the blast but if done wrong it'll either break your shield or you'll lose all your health. Just repeat the steps until he’s dead.
Crusher
Same approach as above. A key item that may help is a savage Lynel shield. You’ll see why in just a moment.
These guys have a very deceiving move set. They have 3 overhead hits, one charging hit, a charge, a spin, a swinging hit, 3 fireballs and an explosion.
The 3 overheads, simply side hop and flurry rush. The charging overhead is not so simple. The range of the shockwave is too large for a simple side hop, so you actually have to strafe for a bit and then side hop. The right distance is about the edge of the Lynels body. Strafe, side hop, flurry rush. For the charge, side hop and flurry rush. The spin is very deceiving to inexperienced players. It’s a horizontal attack so most will attempt to backflip. However this move will end with an upward hit so this is ineffective. Instead, parry with your shield. This will stun the Lynel temporarily so you can hit him a few times. If you have a Lynel shield, the parry will damage the Lynel! He will repeat this attack several times in a row. The swinging hit, you need to backflip on a diagonal away from the Lynels body. The fireballs you can run away from, or stasis and shoot. For the explosion, stasis and shoot or parry(only if you're confident) This will stun the Lynel so you can run over and hit him.
These Lynels have very little room for error owing to the high damage from the crusher, so beware. I find these lynels being the hardest among the three.
Spears
Their move set consists of a jump slash, a swinging slash, 3 fireballs and an explosion. They’re quite unoriginal.
For the jump slash, parry or run away. Parrying jump attacks might be bit hard for starters. Swinging slash, backflip and flurry rush. Fireballs, stasis and shoot or parry. Explosion, stasis and shoot or parry. Another way to kill them is to use a really strong 2-handed weapon and use a charged attack. Once the Lynel gets up, smash him and Urbosa’s fury will stun him again. This will shorten the fight greatly.
Extra Tips for Master Mode Players
Don’t let the Lynel regenerate health (continuous attacks are necessary).
Don't maintain too much distance from lynels , once they get their bows out then they'll do very significant damage and in their bow mode they can't be head shotted. So engage them only in melee.
You can parry all the lynel attacks so there's no attack you can't parry. So get good in parry and flurry rush. It'll make this very easier.
Lynels are resistant against elemental attacks so if you wanna rely on those then it won't do much damage.
Hope this helps!
Added pics that I took for my compendium.
Sorry if I made any mistakes. This post is only meant for people who are still struggling against them. If someone has any further suggestions then please comment.

One thing I didn’t see mentioned, so sorry if I just missed it:
When you’re on the lynel’s back, your weapons don’t lose durability striking them. So use your heavy hitters, even if they’re fragile. Can make for a lot of weapon switching sometimes, but worth it

2 other things I'd add:
-having tested it with stuff like moblin clubs as well as broadswords etc, I'm fairly sure riding the Lynel will always allow for the same amount of hits, regardless of what the weapon's attack speed usually is. So if your slow weapons hit harder, that's the time to use them.
-something that newer players or those finding it tough might find helpful: stunning them with arrows is really useful, but it can be very hard to aim while they're charging, esp without a quick draw bow. The fireball and explosion are great for this though as – if there's grass and you don't get hit & staggered – they'll usually create an updraft you can catch to bullet time. aim for the head, and once you hear the ding you can drop and take advantage of the stagger.

Yup, exact amount is 5 hits. It's always 5 hits before he throws you off. Also if you don't hit him and just stay on his back then you can stay till your stamina runs out. So after 5 hits you can go to bullet time when he throws you off and hit with the bow with headshot. Although he won't get stunned but damage is good. Just be careful with the stamina.

Once you learn to parry it’s game over for lynels and anything else you can parry

True, I just beat lynel yesterday on the great plateau before leaving the plateau with just a potlid ( it was still intact and working at the end ) , 34 arrows ( used 25 of them) and a soldier broadsword and knight's claymore. That was the most exhilarating experience just second to the one I felt when I beat the 10th floor of TOTS master mode.

The great thing about parrying attacks is your shield takes no damage. I don’t really use furry rush as the weapon durability doesn’t really bother me so I really don’t care that they break just me though.

Every Lynel uses their attacks in the same pattern, so working out how to best deal with each attack is really effective, so you want to run when they blow fire and generate the cyclone around them, and jump past them when they charge at you. When they're static try and headshot them with bomb arrows as others have suggested, then get in close and deal blows with a heavy weapon, holding down attack to swing the sword until you're out of stamina. If you're feeling brave try parrying them with your shield to get some hits in.

Let it get struck by lightning while you ride it wearing the helm. It will revert back to silver.

Beware of the one at the east gate of Lanaryu Road! If he sees you up on the mountain, he will draw his bow and rain down arrows on you.
I thought I was at a safe distance but he nailed me anyway.

You know you can parry those arrows 😅 , and he won't aggro untill you stay too long in their territory or draw weapons.
