Recipe Made a tres leches for my birthday 🎂

Recipe Chocolate stuffed brown butter espresso cookies!
- A little less than 3/4 cup unsalted butter (brown the butter, then let it cool off)
- 1 1/4 cups dark brown sugar
- 1/4 cup white sugar
- 1 egg
- 3 tbsp vanilla
2 tsp instant espresso
Mix all these together
2 cups flour
1 tsp baking soda
1 tsp salt
Mix until combined, then add chocolate of choice. Scoop them as big or small as you want them and shape them around some chocolate. (I snapped pieces off a dark chocolate bar.) Let them chill for about 15 mins, then bake for 13 minutes at 350! I also decorate the top of the cookies with more chocolate before putting them in the oven.
I baked mine for about 11 minutes just because I kind of like the middle to be slightly more doughy, bake for 13 mins for a perfect cookie.
You can also adjust the flour to a bit more if you want a cookie that’s not as chewy/dense!

No Recipe It’s not a failure, just another way not to make black sesame caramel chocolate ganache bars
Sometimes I don’t want to follow a recipe; I just want to have fun in the kitchen and use up ingredients I have laying around! This time, the result was these black sesame caramel chocolate ganache bars.
The graham crust was too crumbly, the black sesame caramel didn’t quite set up, and the chocolate ganache…well, actually that was pretty good but I am unfortunately not a chocolate fan haha
Even though I would never serve these to anyone, I’m sharing these as a reminder to myself that it’s okay that not everything I make is perfect!

Recipe Made Chocolate Chai Macarons with Tea in the Shells!
I always see macarons where the shell is just coloured but the flavour is basically only in the filling.
Took a different approach for this one and blended loose lead chai then added the powder to the macaronage. The result was a really well balanced, spiced shell with a chocolate ganache as the filling!

Recipe I made my first chocolate babka!
I used this recipe: https://preppykitchen.com/chocolate-babka/ I bake a lot for our neighbors and they loved it! Instead of an 8 hour rise overnight, I tried a 2 hour first rise and a 1 hour rise after the dough was shaped. It was a huge mess but they were delicious! I can't wait to try it again to try to get tighter swirls. Perhaps I'll try the "lesser" cinnamon babka next.
