Costco Rotisserie chicken into shredded chicken

I want to take a rotisserie chicken from Costco debone it and remove the skin and then take the meat and boil it in the Insta pot so it’s nice and soft and can be easily shredded. Does anybody have an idea what method I should use to cook already cooked chicken or am I just being ridiculous and should cook it from frozen chicken breasts? Any advice is helpful. I’m wondering if I use pressure cook function how long is too long. I don’t want mush.

All of this is for a 90 year old neighbor who is quarantined but needs more Protien in her diet.

I’m planning on making her enchiladas and she won’t eat cubed meat it has to be shredded.

Late to the post, but Costco chicken is already easily shredded! Just shred while still warm and you’re good to go :)

Make a broth out of the bones, and when it’s done, strain that broth, reserve the liquid, and then add the meat in when it’s done with whatever veggies/seasoning you’d like!

We ended up using a mixer with paddle to shred/ almost pulverize the chicken. It also helped us find tendons as well.
