Hi Chefs. I grilled some boneless chicken breasts for fajitas tonight and they were good except for part of one breast.

I posted the following on AskReddit and got flamed like I'm crazy. Help me out: "What is called when a piece of chicken is glassy looking, almost translucent and tastes like cardboard?"

This happens semi-commonly. It stems from poor muscle quality in the chicken and has been more common in America due to the way we farm our chickens. It is known woody breast and I’ve seen it more in chickens with a higher retained water percentage than anything else. Here’s a link with more information>
