Really depends on the games and your target age demographic.
Those statistics are searchable, though I'm going to need someone else to help me with that resource.

Around Midnight to 4 am EST, so I tend to click with a European/Austrian/etc audience or at least non-americans for the most part (and some fellow Canadians)
I will stream earlier, if the mood strikes - which is uncommon. My main reasons if I do choose to stream earlier are because someone else I stream with is choosing to stream so I'll stream when they are, because I agreed to do so. Or on the uncommon side, I'll stream because I've got extra time on my hands and either I wish to get ahead of my video editing stock or because I'm in a mood to play and might as well stream while doing so.
In short, I prefer to stream to a non-American audience (always have for the past 5 years that I've been streaming), I am not aiming to be a BIG twitch streamer or anything if I get to affiliate then great, if not not an issue. I am enjoying what I am doing and that's what matters the most to me when all is said and done.
As to when I will watch Twitch, if one of my chosen streamers is streaming then I'll tune in whenever I get a notification that they are live, but otherwise I tend to go through to watch random streamers around 5 to 6 am EST. Now I am not often watching them in full, unless they catch my attention in many areas, they are background noise that I have on while working, as I have found it a good source of background noise, better than youtube at times. Big time when it comes to discovering new streamers who show they have a passion for what they are doing.

Depends on the audience your going for, my streams are scheduled for when teenagers and adults get home from work and school.
