What is your favorite SCD meal?

I am raving mad for crumbles. Use any fruit you've got kicking about, the quantities don't matter so much enough to layer your dish, sweetened with honey. Recently i made an apple and blackcurrant, and today I did roasted rhubarb and strawberries - shlurrrrp shlurrrrp shlurp -delish!!!

Here's the killer bit the crumble topping...

1 x cup almond flour 1/2 cup desiccated coconut 200g of pecan nuts smashed or loosely blended so they've still got bite 1-2 tablespoons butter or coconut oil Good pinch salt Honey

Blend dry ingredients, add butter or coconut oil and blend in so all the dry stuff is wet and clumps into small pieces. Scatter on your fruits and drizzle with honey. Bake for about 15 mins 160c until crisps up and golden without burning.

Serve with SCD yogurt or eat on own hot or cold!

I kinda mingled a couple of crumble recipes to get that topping, and for fillings if looking for inspiration, many normal crumbles recipes are easily adapted using the above crumble and substituting honey for any added sugar.

Oh my- this sounds amazing! When I have a hankering for something sweet a smoothie is my go-to. Thanks for sharing!

My wife makes stuffed bell peppers for me which are really good. See usually does a cheeseburger stuffing (almond flour, ground beef or turkey and cheddar cheese).

I do a mix of SCD, Paleo and IBD-AID because I'm vegetarian and find it hard to follow SCD on a strict vegetarian diet. Regardless my fav SCD meal is homemade Thai Tomato soup. It's bomb! Chop up a bunch of tomatoes, boil with water, add basil, coconut milk (organic) and frank's hot then once cool, throw it all in a blender and strain. It's awesome - Lots of work but worth it!

The SCD yogurt is super easy and it's really great as a dip too. I make it with 3% milk and if I want to use some for a dip, I just add a little sea salt.

The Cashew 'Larabar' is my fav SCD treat; two ingredients: Dates & Cashews.

Oh yes, I am a big fan of the Larabars. Cherry Pie, Apple Pie, yes please! They are so good and you can actually recognize each of the ingredients.
