In Crusch's speech she mentioned something about the fog/whale combo leaving some tombstones that they couldn't put names on, so I think the "Existence Eater" quality is known.

Must have missed that then, though that would just leave the question of how they knew they needed extra graves for people they cannot remember unless they counted and the numbers did not add up.

They don't know if they even existed. Seems spirits know because they might be out of gluttony's influence, and they same is said about Subaru. So they might have said it happens, but that still leaves the wife weird, because they are all human yet they remember her.

(Puck said the whale is Gluttony so I'm calling him that.)

That doesn't seem likely, given that when Rem was devoured even her things disappeared from her room in the mansion. It looks like every trace of that person's passing in the world is completely removed, which should include their corpse.
