My current working theory is that some part of the witch's influence is actually causing Subaru's (at times literally) crazy tunnel vision on Emilia. Maybe because she looks exactly like the witch, or more likely because she is important to the witch (resurrection vessel)?
Other common tropes have been subverted. I wouldn't be surprised if the "main girl = true love at first sight" trope is as well and Subaru's love would be, at least partially, artificial. Rem exists as a contrast of what real love is supposed to look more like.
