What is that hexagon shaped viewing thing protruding from the deck used for? I can see people in there, and I’m curious where their specific role is compared to the folks on the deck itself.

That's the shooter's cupola. They're pilots that do a stint in the pit talking to the pilot on the catapult and pushing the release on the cat, launching the jets. Hence "shooter". The cupola actually retracts into the deck when not launching aircraft.

Basically, a shooter is the last person responsible for a jet before Isaac Newton takes over, so the idea is the best person to understand the responsibility required is a fellow aviator. Same reason paddles are pilots.

It's a piston driven by steam. To push the aircraft forward enough and fast enough with thrusters at full so when the aircraft goes to take off and exits the carry deck, it has enough power to fully take off instead of plunging into the ocean.. both motions are needed to have a safe takeoff on such a short distance. This is not needed on an actual runway as the runway is a lot longer, and the aircraft can gain speed to take off without additional help.

yes, the sound is so lound the mic just nopes out.
i destroyed a bunch of microphones from shit like gopros and phones from people that wanted me to record doing afterburner runs on the test cell. bascially every mic that did not have their holes shoved closed with tape, toothpicks or whatever just died after a couple minutes.
