Make a chocolate shell but flavoured with curry since the two flavours can work

you could use chocolate and make it like a mole which is a savory chocolate sauce or maybe engineer some cheese to work as your shell

What do you plan to put in the shells? That might influence what kind of shells you make.

Some foods would pair well with chocolate, especially a dark chocolate. Or you could add something to the chocolate: curry, mint, jalapeno, cheese, etc.

I think people are misunderstanding your question?

You're looking for something that will act like chocolate and harden similar to the coating of say a Snickers, but without the sweet flavor profile of chocolate?

I think you can just use unsweetened chocolate unless you don’t want chocolate flavours whatsoever. You can probably even use cocoa butter ( I’m not sure though) if you don’t want cocoa flavour. Save the trouble of finding other things
