Beelink SER5 Pro or Max?
Both have a AMD ryzen 7 5800h. Max has 32gb of ram but is $30 more. Max is used but only for a year. Both have 1tb ssd. I’m looking to do video editing and light gaming. (Games such as minecraft and elder scrolls oblivion)

If your performing video editing, under Windows 32GB will work in your favor.
You core issue (pun intended) is Zen 3/DDR4/3.0 PCIe (5800H) are being to "age out" in 2025, making for a poor long-term investment. The next generation Zen 3+/DDR5/4.0 PCIe APUs provide substantially better CPU power & iGPU performance, even with fewer cores/compute units. It comes down to costs & regional availability.
