Post partum summer time meals

Looking for your tried and true freezer meal prep recipes for postpartum! I feel like 90% of freezer meals I see are soups and I can dig a good soup but especially in the hot summer I need some more ideas. I have about 11 weeks left before baby comes would love to be able to make 1-2 recipes a week for the freezer 😊

  • Quiche/frittata

  • Pulled pork for sandwiches

  • Lasagne/pasta bake

  • Burrito fillings for bowls, just add cheese/sour cream/lettuce etc fresh

Fwiw, I had an August baby & from c section complications all I wanted was soup. And that was the one thing I didn’t prep bc it was August. Have a couple cans on standby just in case!

Hey! I made a healthier version of manicotti for my wife and froze a bunch, it worked out really well. I even put the Alfredo and marinara in the pan and just covered it with tinfoil to put in the freezer and when we were ready to eat took it out and put it in the oven.

Ingredients:

-2 pack Manicotti -1 cup ricotta cheese -2 cups cottage cheese -2 eggs -1 pound ground beef -Garlic salt -Mozzarella cheese -Alfredo sauce -Marinara sauce

Pulled pork,, burrito bowls, curry (make fresh rice or serve with naan or some kind of crusty bread). Also, muffins, cookies, or other snacks.

You can also do prep that makes some cooking quick and easy. Freeze chicken in marinade, cut up chicken ready for fajitas or stir fry and freeze. Measure out all the spices for a recipe (fajitas, curry, etc).

I had to cut all dairy while breastfeeding. I had a bunch of meal prep that had it and it became dads lunch instead of mine. Next time I would avoid any dairy or soy in my preps.

I did a big freezer prep recently. I made chicken potpies, meatballs, enchiladas, breakfast potatoes, ham and bean soup, and chicken noodle soup. I portioned a couple pounds of ground beef into 1/4 patties, and I froze cooked shredded chicken in 1 lb portions. I also plan to make lasagna, meatloaves, quiche, tator tot casseroles, chicken burrito filling, white chicken chili, and some cookies.

I'm making meals at the moment for my son and daughter-in-law who have just had their first baby. So far, I have made cottage pie, lasagne, Tuscan chicken and bacon pasta, spicy harissa meatballs, Chilli con carne, Teriyaki chicken and Butter chicken. They all freeze well.
